I just made kale chips for the first time - AWESOME! Even my kids like them, which was totally shocking. Anyway, the first night I put them in a glass jar and put the lid on. Next day they were soft. So, I redehydrated and put them back in glass jar without the lid. Next day they were soft again.

What am I missing here?

When I make Kale chips they go in a glass container with the lid. If you don't eat them within 3 days you can actually leave them with the lid and should last several weeks.
Now let's say you make crackers in the dehydrator,you would save them for WEEKS in a glass container in your refrig. Hope this helps.

I store kale chips in an evacuated seal-a-meal container, either the large plastic one or a wide-mouth quart jar (you can order a device that seals the quart jar from the vacuum storage companies). The chips keep for weeks in the evacuated container in a cool dark place. In a regular jar they might keep well if truly dry when you put them in and if the lid has a good seal.

The kale was not in the dehydrator long enough. Kale can be dry enough to enjoy right out of the dehydrator after just a few hours of drying time, but if you want it to stay crispy then leave it in the dehydrator for at least 12 hours. Once out of the dehydrator pack in airtight container immediately. Also 110 degrees is best.

Thanks. I'll leave them in longer this time. The recipe I read said 4 hours and I left them in a LOT longer than that. Alright, next batch going in very shortly.
