ARE..... YOU..... REEEEADY!!!!!!!!

Hello, Hello, HELLO Everyone!!!!!!

O.k.!!!! It's time to start savouring Alissa's new creations in her new Book, RAW Food for EVERYONE!!!!

Here's what I'm planning to do: My family has decided to go RAW with me for the ENTIRE month of NOVEMBER!!!!!!! 100%!!!!!!!!!!!!!! So, we are working our way through Alissa's new book and discovering new and delicious recipes that will keep my family eating RAW ****4EVER**** ;)

We actually started on November 1st, but I didn't have a chance to start this thread till now... But, I ***DID*** take photos from the 1st day to show you!!!!

I will also be making recipes from Alissa's 1st book, Living on Live Food, because there are certain Recipes that my family LOVES from there. But, I'll let you know when it's from LOLF or RFFE...

I will ***TRY*** to post daily, but I'm also homeschool and work as a flight attendant, so I may have to skip a day here and there...but I will take photos every meal!!!

O.KKKKK!!!!! So, let's get started:

NOVEMBER 1: DAY 1

We started off with Smoothies! Alissa has 50 Smoothies listed on page 180 - 181 of Raw Food for Everyone (RFFE). We made the Banana-Cacao-Date combination (but I used Carob). Here is my Son (age 12) putting it together:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/RAW%20book%20for%20KIDS/1000000366.jpg

My kids LOVE Carob! So I knew this was the one to start with!

Then, for snacks we had Fruit. I belong to a Co-Op, so I get my fruit and veggies from there 100% Organic! I try to but Organic when I can if I'm at the store. For lunch we were out and about, so we stopped at Salada and had a Gormet Salad with Sundried Tomato Vinegarette for dressing. The kids wanted Ranch, so they did have that. I'm NOT sweating the small stuff!!!!! If they want regular Dressing, so be it!!!!! I was SO proud of my Son! He did ***NOT*** have the Salmon he usually have on it and he didn't even miss it!!! My daughter is 8 and a HUGE carnivore, so having just a salad was HUGE for her!!!! We did add Avacado on it, so that filled them up pretty good! When I got home, I put some things in the Big "D" so that we can have more of a variety they next day....We also had fresh CARROT JUICE with it. My kids LOOOOOVE Carrot Juice!!!!

Here's dinner Day 1:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000369.jpg

We made Alissa's Collard Rolls (LOLF) and Vegetable Nori Rolls (RFFE, page 245). My Son is allergic to Nuts, so I made the Collard Rolls for him!

I also fixed a Coconut Smoothie and used Coconut H2O, Coconut "Meat", Lime, Pineapple, and Sea Salt. YUMMY!!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000370.jpg

stay tuned for day 2!

Yesterday (DAY 2) here's what we had:

For Breakfast: Another Smoothie! This time: Spinach-Banana-Kale combo (RFFE, Page 181) My Hubby doesn't like Kale, so I made Spinach-Banana-Mango for him.

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/RAW%20Demo%20Feb/Amazing%20RAW/AMAZINGRAW3-31-10001.jpg

Snack: Fruit (Bananas & Pears)

Lunch: Salad

In the meantime, I had made things to go in the Big "D" earlier...

Onion Rings: (RFFE, Page 236)

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000383.jpg

Italian Bread Wrap for the BLTA (RFFE, page 386):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000378.jpg

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000376.jpg

I also made the Quick Cheese (RFFE, page 129) to put the Wrap together....

When I tell you guys that this was GREAT....OH MY GOODNESS, it was BEYOND GREAT!!!!

The only changes I would make: I will use the VitaMix for the Wrap Bread next time because the Food processor did not make the Pulp as fine as Grezzo's was... I also used these Eggplants:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000372.jpg

instead of the Fat Purple ones because I think Grezzo uses these (Alissa doesn't say....), but when I had the Sandwich at Grezzo the Slices were longer instead of fatter... My sandwich tasted just like Grezzo's though!!! This was my favorite when I had it!!!! Ask Alissa!!!! My eyeballs POPPED OUT OF MY HEAD when I first saw it at Grezzo!!!!!!!!!!!!!!!!!!! LOL!!!!!!!!!!!!!!!!!!

The Chips...I will definitely make these thinner next time. The mandoline I used cut them kinda thick for my tastes... I'll use them for dipping, though...

Renee... I used to be a bit of a "regular" around here many years ago and haven't posted (or eaten raw) in a while.. I still read the boards though and this thread made me have to post something!

1. This thread is an AWESOME idea! I went to Barnes and Noble yesterday and looked at Alissa's new book.. I think I'm going to ask my hubby for it for christmas.. and I can follow you and your family making the recipes until I get it! Thanks for doing this and congrats to you and your family for going raw for the month! I can't wait to hear how it goes!

2. My husband (who is NOT raw) and I went to eat at Grezzo earlier this year and he had the BLTA... and LOVED it! I tried it too and it was sooo good, you are right! I would LOVE to be able to recreate this at home for my hubby and me. Yours looks just as good as the Grezzo one!! Was it complicated to make or did it take a long time?

thanks again for this great thread and I can't wait to hear more! While I'm not raw right now (I'm pregnant) I'm definitely wanting to incorporate more raw elements into my diet.

Here's the BLTA all put together......(last night's DINNER)

Thanks you guys!!! This is SOOOOOO much fun!!!!

Here's what we made for today:

Fruit for Breakfast
Snacked on Alissa's Flax Crackers from (LOLF)

Lunch - Corn Chowder (RFFE, page 320) YUMMY!!!!!!!! I haven't made this in a while, but my kids REALLY love it!!! I topped mine with Cilantro, Chives, and extra Corn....sooo good!!! We had this with the leftover BLTA Wrap on the side!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000387.jpg

I'm not a fan of Avacado-Chocolate Pudding, so I wimped out and made it with Coconut! I followed the recipe on page 432 (RFFE), replacing the Avacados with Coconut H2O and "Meat". My kids came up with the idea for the Almond-Date Crust and Coconut Sprinkles on the top! We call it Chocolate Pudding Pie!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000389.jpg

For dinner, we chose to have Alissa's Worcestershire Portobello Dandelion Salad (I used Spinach, though...):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000390.jpg

This was FANTASTIC!!!!!!!!!! I ***LOVE*** the Worcestershire Sauce (pg 289) with the Portobellas!!! Not a fan by itself, but with the Mushrooms it's a perfect marriage!!!

For dessert, I had previously made some Mint Choc Chip Gelato, so we had that...Yummy! What a GREAT DAY!!!! :)

***NOTE*** I will *not* be making anything tomorrow...but I have a GREAT REASON.... I'M GOING TO SEEEEEEE ALISSA!!!!!!!!!!!!!!!!!!!!!!!!!!! I'M GONNA GO TO THE BOOK SIGNING!!!!!!!!!! YIPPPPEEE!!!!!!!!!!!!!!!!!! I'll send her all of your LOVE and HUGS!!!!!!!!!!!!!!!!

Renee... I used to be a bit of a "regular" around here many years ago and haven't posted (or eaten raw) in a while.. I still read the boards though and this thread made me have to post something!

.....Yours looks just as good as the Grezzo one!! Was it complicated to make or did it take a long time?

I remember YOU!!!!!! I'm so glad that I inspired you!!!! The recipe was not complicated to me... There were several small recipes that went into making the wrap...(the Red Wine Vinaigrette, Quick Cheese, Bread Wrap, and Eggplant Bacon)... I made the Bread Wrap and Bacon the night before and it was ready by morning because I used a veggie peeler and made the Bacon thin like at Grezzo... It tasted JUST like the samples that Alissa gave me at the Restaurant. The Cheese & Vinaigrette was easily made the morning of... By Lunch time, all I did was assemble.

The key for me is making things the night before. I just imagine what I want to eat the next day and make sure I plan. It's not hard. Some things you don't have to prepare for in advance, but some you do... Just like if you were making SAD food and you had to pre-soak your beans or marinate something... Some thought goes into preparing when you have a family to feed, but YOU ****CAN**** DO IT!!!! :D

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000402-1.jpg

Hey Alissa, I just LOVE the darker hair, BTW!!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000404-1.jpg

I had to use my Phone to take these....I wish they were clearer....

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000401.jpg

She DID HER THANG, YAU'LL!!!!!!!!!!!! It was SO great to see her and Janet again! She hasn't changed a BIT!!! ...still Sweet as ever!!! ...still GRACIOUS... She gave about a 1 hour talk and answered questions from the audience.

Some questions were about how Raw Foodists get protein, how the lifestyle is maintained, etc... What really stuck out to me was that Alissa suggested Sprouting in HOTEL ROOMS!!!!!!!!!!! I had never thought about that before!!! But, I'm sure gonna try it!!!

She also suggested taking your own dressing to restaurants and reminded us of how she used to take Fudge Balls with her, especially at parties! I asked her what the biggest difference between both books is to her and she mentioned the experience of the lady in Florida that she helped as well as of the experiences in the 1st book, the Charts, the 30 day Menu Plan... I too feel that both books are very different from each other. Both wonderful in their own right... She served samples of her Date Nut Torte, which was a HUGE hit, of course!!! We even got to take some with us...of course most of it didn't make it to the hotel!!!!!!!!!!!!!!!! :-D

It was dreary and rainy there, but my daughter and I had a WONDERFUL time!!! We packed PLENTY of fruit, nuts & seeds, and took lots of Eggplant bacon for snacking and making sandwiches. We did go to the hotel restaurant and had a salad too. It was good to get away...just us girls! I wish I had more time to spend with Alissa, but I know that we'll get to visit again when things slow down a bit for her! She's in DEMAND right now, you know! :-D

Also, one of my FAVORITE photos of her was when she posed with my Daughter. She's 8, and I'm not comfortable putting her photo on the Net, but I cropped it so you can see a bit of it... It's one of the BEST photos I took of Alissa, I think... (of course, SHE IS INCAPABLE OF TAKING A BAD ONE!!!!)

Hey everyone!!!

Today has been a tremendously busy day for me!!! So far today we've had: Alissa's Buckwheaties Cerael w/Fresh Fruit (gotta do photos tomorrow...), Freshly squeezed Grapefruit Juice, for Lunch I attempted to make Alissa's Thai Lettuce Wraps, but I couldn't make the sauce, so we just ate um with Nama Shoyu... I'll have to make um again when I have more time to make the sauce... I still have some Kelp Noodles, so I'll prob be able to make them Monday cuz I have to work tonight. My daughter said the Noodles are "growing" on her...she didn't like them when she 1st tried them...

I still have leftovers from the Roll yesterday, so that'll be dinner today...

GreenT

Ohhh good! Happy to know that there is a good sounding recipe for those kelp noodles. I don't quite care for them much but they would probably be good in the wraps.

I soak the noodles in warm water for a good hour or so with some lemon juice...it helps to make them softer

Can't wait to see your pics....woooo hooo!!

Hi everyone! I did not start on Nov 1st like I had planned, because I had quite a bit going on here at home. Needless to say, despite some craziness, I managed to REGISTER for the DEC certification with ALISSA! WOOOHOO - I am beyond stoked!! So this is a 30 day challenge that will continue through the raw chef training. Going to look for flights and such tomorrow and check in with hubby's schedule to make sure baby is covered! I am not letting my controlling mommy tendencies take over here! I was kinda tired today -- i think I am detoxing a bit already.

I made the avocado skins, greek pizza, guacamole, and quick cheeze -- hubby really likes the avocado skins - he's eating them right now, suprisingly.

green smoothie - 1banana, 1 apple, 1 orange, 7 collard leaves, nutmilk and OJ

avocado skins
http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4676.jpg

eggplant bacon -- kinda scrawny and chewy - i didnt know how to slice them thin enough, plus my dehydrator is 4 trays, so im not sure if that affects the "cooking" time -- any tips are welcome!
http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4678.jpg

my proudest moment today -- the greek pizza! its coming out of the D-HI now.. used the Easy Crust from LOLF http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4675.jpg

looking forward to dinner -- i did a different method to upload pics - hope this makes them bigger?

I am planning to make better eggplant bacon tomorrow.. meanwhile, I hope to do the marinated greens and the curried butternut noodles tomorrow, along with either the bistro burgers or the carrot pecan burgers..

blessings!

You GO Gurl!!!! Your food looks FABULOUS!!!!! :D I was JUST looking at the Avacado skins!!! You beat me to it!!!!! :D

Yea, for the Bacon, try going thinner....use a Veggie Peeler. It'll be more "bacon-like"... That's how they did it at Grezzo. Also, try different Eggplants! See photo on page 1 of this thread... Also, if they are chewy, you should dehydrate longer. You want um chrispy...

The Carrot Pecan Burgers are amazing!!!! But, you GOTTA do the Calzone from LOLF!!!! Trust me!!!

You'll LOVE the Class!!!! Take lots of photos and hug Alissa & Janet for me....again!!! :)

I appreciate the tips ReneeH: I had a regular eggplant and a really small rusty looking veggie peeler - the eggplants you have in the earlier photo are CHinese eggplants -- i found them at the Asian grocer really cheap, but I will see if i can find them organic at my co-op.. along with a good veggie peeler

I LOVE the carrot burgers - I made them about a year ago with a raw buddy and i made almond butter sauce on top.. but hubby doesnt care for them so i will make a set of the carrot burgers and a set of bistro burgers. The pizza was awesome -- i really like tomato sauce on my pizza though, so the next Greek pizza will have a marinara layer over the cheese.

THanks everyone - more pics to come later :)
Blessings!

Here is a pic of my avocado skin for lunch: I am all out of broccoli, so I used a few asparagus stalks in the nutty sour cream and put some eggplant bacon on each side.. a dash of paprika and it was gone within minutes!
off to take a nap and try my hand at the previously mentioned recipes.

Thanks Shona, GreenT and Amarynth for the pizza compliments! I have always shy-ed (sp?) away from the pizzas and calzone because I was afraid of putting in all that effort and not having it taste good. Now I know that it is really much simpler that what I imagined.

i am so excited to share more food and pics with you guys! have a great day!

Here's the Buckwheat Cerael from yesterday! It was ok...I wish the Buckwheat had more flavor, though... I chopped some Bananas, strawberries, Raisins, and Almond Milk. I did sprinkle some Cinnamon on it, though. My Buckwheat didn't Sprout that much, though. Alissa said it may have been sittin' in the store a while. I dud get a tiny tail, though...

Thanks Shona, GreenT and Amarynth for the pizza compliments! I have always shy-ed (sp?) away from the pizzas and calzone because I was afraid of putting in all that effort and not having it taste good. Now I know that it is really much simpler that what I imagined.

When you see Alissa make the Calzone all of your fears will disappear! :)

Hummm...well, it had to grow on me. The first bite I was worried because the combination sounds "interesting...." But, after that I LOVED it!!!! The more I ate it, the more I loved it!!! I especially love the Basil in it!

My kids didn't care much for it until I told them that they could suck it down with a straw like a Sweet Potato-Grapefruit Soup SMOOTHIE!!!!! LOL!!!!! Then, they LOVED it!!! LOL!!!!

I also made Alissa's Sausage Patties (RFFE, pg 208) because I want to make the Sausage & Onion Pizza tomorrow...

I made some like links and some like patties:

I ended up putting some sprouted quinoa in it because I wanted something more filling. VERY nice. Will make it again for sure. Tasted like Thai food. I also made the BLT today....... To die for, so good. I get to have them in my lunch 2 days this week :) Going to try the Butternut Ravioli this week.

Renee you are so awesome for letting us follow you thru this journey. I need to venture out to other recipes so I think I will study this thread and others like it.

Do you have a way to put together meal plans from Alissas book? I seem to just look thru the book and then move back to the same ole routine. I need some motivation or maybe just a few less projects!

Thank you! Hummm...good Question!

I usually spend some time the night before thinking about what I'd like to have the next day. I ask the kids what they'd like to have and make my menu based on that. Most of the time they say, "Whatever you fix is fine!", which means I'm on my own and have to come up with something.

I love looking at the photo thread! That gives me ideas sometimes, or I just cruise through Alissa's book and see what my taste buds scream for! For me, I absolutely *HAVE* to make things the night before or the morning of. If I wait, I may not have the things I need for what I want to make.

Living on Live Food had a 30 day plan...Raw Food for Everyone does not. So, you have to be creative and come up with a meal plan. But, I think that's what Alissa is trying to tell us. I love trying new recipes, but I wish I had the ingredients for everything in the book!!! Sometimes I look at what I've got and make my menu based on what I see in the frig!

Thanks for asking!!! :)

You are SOOO RAWKIN' it!!!!! You GO Gurl!!!! Look at YOU!!!!! I'm SO proud!!!!!

Today I have to work, so it's been leftover nibbles for me! I totally LOVE the Sausage!!! I dehydrated them a really long time, though cuz I wanted to get that crispiness that Alissa said it should have. I wrapped them in Lettuce and had some on w flax cracker....SOOO GOOD!!! I still wanna make the Sausage & Onion pizza when I get home from my trip, so I had to stop myself from eating them!!!!

I absolutely LOVE the Enchaladas even more today! I warmed them in the Big "D" for an hour and they were wonderful!!! I also had Alissa's Corn Chips today:

I made the Butternut Squash Ravioli!! They were very good. A lot of work though and very rich. I had left over squash mix so am freezing for next time. I accidentally overdid the salt, so I wasn't able to eat too much but I will try them again. The main part I am not in love with is the crunchiness of the Ravioli part... anybody try Ravioli with something less crunchy then turnips and had success? I am even thinking papaya would be amazing with this with all the warm spices and curry. I did use a mandolin too.

I have the pickled pink onions in the fridge and the sweet pickles asparagus pickling too for the Arugula-Grapefruit salad. I also have a papaya on hand for the Papardelle. Looking forward to uncooking this weekend. I am sorry for no pictures but I will work on it. :)

I got some Chanterelle Mushrooms yesterday and mixed it with my Butternut ravioli and spinach with curry sauce leftovers. I put it in the dehydrator to melt the oil. GOOD GOD, this was so divine!!! That vanilla infused coconut/olive oil is just ridiculous. I want to have that on hand at all times. If only Chanterelles were around on a regular basis. I remember tasting this at Grezzo... Alissa gave me 2 containers of it the first time I went and I bought 3 or 4 of them the 2nd time I went!!!!! Now, I can't BELIEVE I actually made it!!!!!!!!!!!!!!!!! When I tell you this is INCREDIBLE believe me, it's INCREDIBLE!!!! The one on the left is without the Pecans because my son is allergic to nuts. I can't WAIT till the morning and have this with some fresh Almond Milk! YUMMY!!!

I also made the Star Anise Papaya Steak:

These are two of the EASIEST recipes to put together! You guys HAVE to try these!!!!!

Here's what I'll be making this week:

* Wild Mushroom Fettuccini
* Butternut Squash Ravioli
* Tomato Ravioli
* Jambalaya

Wasn't it just DEVINE!!!!! I warmed my bowl too!!! My kids had me make theirs w/o the Jalapeno, but when I added it to mine it was MUCH better and they liked it more with it. I noticed the Jalapeno cut some of what I expected to be bitterness from the soup! It was REALLY good!

Tomato Ravioli, RFFE, page 365:

I just had Basil, so that's what I used.... YOU GUYS!!!!!!!!!!!!!!!! This is SOOOO BEYOND FABULOUS!!!!!!!!!!!!!!!! So Tastey!!! I especially LOVE the GARLIC/EVOO Blend under the Tomato! This is SO GREAT! You guys just HAVE to try this one!!! It took about 1 1/2 minutes to make and it's DELICIOUS!!!

Star Anise Papaya Steak with Salad, RFFE, page 358:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000442.jpg

This was even better than last night!!! I just LOVE how all of the flavors just MELT the Papaya in your mouth!

When you eat it, close your eyes and let the flavors take you beyond where no meat lover has gone before!!!! :-D

I also made: Coconut Chocolate Pudding, Pina Coladas, and samples of Onion Bread and Alissa's Pizza Bread.

When I let my Mom taste Alissa's Sausage, I didn't tell her what it was, I just said, "Taste this and tell me what you think it is..." She tasted it....let the flavors mingle in her mouth and said, "This tastes just like SAUSAGE..." YEAAAA!!!!!!!!!! How cool was THAT!!!

What a GREAT day!!! :-D

WOW reneeH - you really were divine in presenting these pics -- why -- because at the exact hour these pics were posted, I was cutting and scraping out a papaya and wondering -- how the heck am I going to cold smoke this in 36 degree weather -- i really dont want to do this outdoors!!!

Man that looks soooo awesome ! I have everything - I did freeze the papaya though because I was scared it would go bad and I paid good money for that non-local tropical fruit, lol!

How can I make this indoors - i see you have a dehydrator going and basting every thirty minutes -- i need to know -- i am really wanting some salmon and I made an amazing marinated portobello in its place. Hubby TOLD me i had to take a picture of the mushroom - coming soon!
Meanwhile I just bought some new cool glass storage containers to clear out my fridge and make new fresh dishes!

blessings! Keep rawking people!

Those look so good! The Tomato Ravioli is ON for next week. I also love the looks of the Hawaiian Pizza. Today I had left over Papaya Pappardelle on Italian bread wrap with some extra white sauce from the recipe and some tomatoes. What an amazing lunch. Love how the leftovers are sometimes even better then the first go. The Papaya dish was a little disappointing because I didn't get a lot of Papaya from my fruit which made the dish more of a green bean dish, but in the sandwich this morning it was incredible, and I know next time to get a bigger papaya. The white sauce from the recipe is really good as a sandwich spread. It has mustard seed and shallots which makes it a little spicy. Yum.

WOW! Is all I can say! I have been raw for almost two weeks, 100%, I have been going back and forth with raw and cooked for a while. But after seeing all of your pics I am so excited to try some! I am getting a dehydrator for Christmas, I am trying to talk my husband into letting me get it before then. I am definitly going to purchase Alissa's new book, I have her first one! Can I ask you a question Renne, how long do the foods stay for leftovers? I made Alissa's blueberry cheesecake on Sunday, and I still am eating it today, and it seemed fine to me, but I was wondering what a good amount of time is. I will continue to follow along. Thanks!

Hi Tryingtogoraw!!!

2 weeks Raw is AMAZING!!! Congratulations!!!!!

Really, it depends on what you've made. Something like the Blueberry Cheesecake or the Sweet Potato Pie I have eaten even up to 5 days later. If I wanted to eat it after that, I would definitely freeze it.

Now, something like Almond Milk has a high turnover in my house!!! :D So, I make it every 2 days or so. I wouldn't drink it after 3 days myself...but then again, I have been known to pour it into IceTrays and freeze it too!!! :) Alissa's Chili--I have eaten that 5 days later and it was fine.

Now, the Lasagne...I don't like mine after the 2nd day. If you have something like Zucchini Pasta with Marinara Sauce, the Noodles I put in a ziploc baggie and keep for 2 days. But, I dry them out first on the counter before I put them in the frig. If you put them straight away then they kinda turn to mush on you. So dry them for a few hours, room temp first. The sauce is good for a couple of days. I usually don't want it after that.

Another thing you can do is make 1/2 of any recipe to reduce some of the leftovers...especially if you're making Alissa's Chili--although I HAVE been known to eat the ENTIRE BATCH MYSELF!!!!!!!!! (I *KNOW*, right!!! :o) That way, you can make it fresh again when you want it.

You kinda have to smell/taste it to judge it for yourself. Most Raw and Living Dishes using fresh, Raw ingredients isn't meant to last 2 weeks in the fridge, IMO... Fresh is ALWAYS better. But, I know that most of Alissa's meals in LOLF are HUGE, so you're gonna have leftovers.

Hey everyone!!!

I have to make the Saffron Sauce tonight for the Fettuccini to eat tomorrow. I have the Candied Pecans in the Big "D" right now too, so that I can make the Butternut Squash Ravioli also... The wild Rice is soaking now, for the Jambalaya (I am SO excited about this one!!!!!)

So, today I need to make something that does not require dehydration....so, I decided to go with Zucchini Pasta with Marinara Sauce, which I have made dozens of times and can whip it up in a jiffy...

Can't *wait* till tomorrow!!!! :D

Hi Renee! :D

I just have a quick question. I don't have RFFE yet, (not getting any new books until AFTER this move), but was wondering for things like that bread/wrap you made and others, is Alissa still using the wheat berries and/or rye for certain things? Like in the Pizza Bread for LOLF?

I ask because we can't have anything that contains gluten in our house, so I was wanting to check that out now so I know.

Keep up the great work! Your threads are so much fun to read. :)

I look forward to your pictures and reviews Renee! I loved everything about the butternut ravioli except the crunchiness of the "pasta"... look forward to your take. The candied pecans are pure heaven. Loved the mushroom dish, but didn't feel like eating the leftovers, not sure why. I think for me the shallot was too strong, and I would go with a little less for my taste buds next time. I use the left over mushroom spice mix on various things that I cook for my family. Can't wait to hear your families reviews :)

Thanks you guys!!!! I wish i could answer you all individually here, but I'm on my phone, and haven't got much time...

Shine, Yea, I haven't seen anything with Wheatberries either... I'm loving the Breads so far!!! I wasn't crazy about Wheatberries, though I have a new found live for Buckwheat because of Alissa's Calzone and the new Granola!!!! My kids LOVE the Granola!!! I'm looking forward to making the Jambalaya! I've never had sprouted Wild Rice!!!

(I'm laughing at myself right now because when my daughter was watching me type earlier she called me the EXCLAMATION QUEEN!!!!! 'cuz I use so many in my posts!!!! :D)

Hey Janice, what did you use to cut the Turnips? A Mandoline or a potato peeler? I'm wondering if that was the reason it was crunchy... Looking at my photos from Grezzo, it looks pretty soft to me...so they may have used a potato peeler, though the recipe is not in front of me now to check.... I'll let you know when I make it.

Have a Rawsome nite all!!!!

Raw steady ya'll! I have been green smooth-ying my laziness a bit.. under the weather (menstrual stuff, but milder that when eating SAD) so making only two dishes a day and green smoothie for the other half.

my green smoothie for the past 2 wks has been
1 apple
1 orange
1 banana
2 handfuls of leafy greens
sometimes 1/2 a sweet potato or 1 beet, depending on energy or immunity
some orange juice and nutmilk ( 1/2 cup to 1 cup each)

as for food, today I made broccoli salad - hubby and I were both liking this! I will omit or use only 1/4 cup onion next time and add a touch more agave. It was still great though! I also used 50/50 mix of sunflower seeds and pine nuts, and a mix of dried berries along with raisins (dried currant, blueberries, blackberries, cherries, and cranberries

Ohh yeah ReneeH - you are a great raw teacher mentor!! A virtual invitation has been accepted, lol! I was thinking of that movie Julie and Julia when I bought this book -- planning to make at least 2 dishes a day for the next couple of months, depending on schedule.

I just bought my plane ticket last night and I beyond excited! HUbby is a tad sad though, but that is because he will have to be Mr Mom for the weekend - i plan to make a few items for them before I leave, but they both are so sweet when Im away for a bit..

Anyways, not sure what I will make today.. I basically look in my freezer and fruit/veggie drawer and check the index for recipes using that ingredient - yesterday I noted I had quite a few mushrooms and broccoli. Today will likely be cucumbers, tomatoes, and squash.. hoping to try the tomato ravioli and finally do the curry noodles from LOLF..

BLessings! rawk steady!

Hi everyone!

ReneeH I got a question, when you made the granola what kind of oats did you use? If you use oat grouts do you soak them?

I made the Mediterranean-Style Pressed Lasagna pg 352-353. Oh my goodness it was so yummy! It was super easy too! Just to let you know it makes ALOT! It says to use a 8x8 pan but I used a 8x11 pan and there was plenty. Next time I am going to half the order.

This salad had a lot of prep! The pickled onions are soooo good, love having them on hand for sandwiches. The almonds are so good too, simple but something I have not done before. Not sure I will make this exact salad again, but the flavors with the pickles and the berries and the almonds is really good. I need to drain more of the vinegar off next time, maybe to the point of squeezing the berries so it is a little less sour. The onion with the vanilla and beets are really nice. I need to learn how to make a picture url, so I can show bigger pictures.

okorolina: That mushroom is amazing!

Renee: The recipe called for Mandolin. It was the first time I used one. Maybe there are settings for thinner slices? They were very thin though. I will likely use a summer squash or big zucchini next time, so they are more tender. Nothing wrong with crunch, but I would love something more noodle like.

Everything looks so delicious!! I have a couple of questions: first when Alissa's says to soak dates in a recipe, how long do I soak them for, also how long do I soak raisins for? How should I be storing my almonds? And how long should I soak them for if I am making almond milk? One more question, how do you make that broccoli salad? I love broccoli salad and it looked sooooooo delicious, I was going to eat my computer! Thanks for the help ladies! I am trying to find things for myself to eat on Thanksgiving, since this will be my first raw Thanksgiving and my whole family will be here, and they are not raw, but it doesn't bother me when people are eating cooked food, as long as I have delicious uncooked food in front of me!!:)

I was looking at Alyssa's new book and wondered about the avocado skins recipe. The directions were a bit unclear to me. Did I read it wrong, or do you throw out the avocado meat and bread the skin of the avocado? Is that safe to eat? I re-read the directions a few times and was still confused. Please advise. Thank you! :)

im assuming its like a potato skin dish where there is a portion of potato. so i think the avocado is skinned then breaded. and the skin is thrown away.

PS thanks for sharing such awesome pictures, guys!!!

My big question is about soaking things and how long you do it for. Thanks! I am going to try the turnip ravolli this weekend in Alissa's first book!!

hi tryingtoberaw:
I soak my dates and raisins for about 3-4hrs, depending on the recipe
I store my almonds in an airtight container in the fridge or freezer
I usually soak my almonds at least 12-24 for nutmilks - i try to soak 24hrs -soaking recommendations for nuts and seeds are in RFFE, page 57 as well as in LOLF
I usually soak cashews at least 4 hrs, but usually 6-8.
Usually also soak sunflower and pumpkin seeds for 4hrs minimum..

The broccoli salad was super easy to make! It was best to make the "mayonnaise/cream sauce " first, which can be done with a regular blender, actually. I didnt want to use a lot of pine nuts, because they are pricey, so I used 3/4 sunflower seeds and 1/4 nuts. I left my dish to marinate at least 4 hrs so i used dried seeds, knowing the wetness of the dish would soften them a bit, but I will also make it again with soaked seeds and see if that makes a difference. I also was low on raisins, so I used this triple berry mix of dried cherries, blueberries and cranberries, along with some currants and it really was nice and sweet. I feel that the onion did kinda power up the flavor a bit, but by the next day it was much more mellow - this is why I mentioned I would reduce the onions to 1/3 or even 1/4 cup, or add more agave.

You will be totally great! Jump right in and follow the recipe - after youve done a few it will feel much less intimidating. I always wonder if my recipe tastes as good as the original, but as long as you happy doing it your spirit adds a little flavor as well, lol!

janice: thanks for the compliment! Hubby is my official taste tester and pr person -- he makes sure the dishes are delicious and confirms whether I have taken a pic of it ;)

reneeH: have fun with the Level 2 class! That is soo great! I will have to send you a private message as to how set up your menu! do you have a theme usually?

Keep rawking steady everyone!

Okorolina40~thank you for the information. I was wondering how much broccoli did you use, also did you use the mayonnaise/cream sauce from Alissa's LOFF? Thank you for the encouragement! I really need that. I did talk to Eva Rawposa for about 15mins the other day and it was nice. My biggest question was when to eat, and she told me when my stomach growled, which is so different from the normal SAD diet. My only issue is I feel like I am always hungry, she told me to eat until I am full, and I do this and then it seems like an hour or two I am hungry. Should I eat again? Is this normal? Thanks again for the help. I can't wait to try your recipe.

No problemo :)

I used a little over 1 pound of broccoli, mostly florets. you can also try broccolini too - that would be so gorgeous! I used the quick mayo from RFFE-- pg293. I hadnt even checked LOLF for the mayo.. i will have to try that one too and see what the difference is.
I agree with Eva. In the first month of raw I was eating every 30 min, lol! Luckily I am a student, so its not hard for me to sneak in snacks. I usually make a large 32oz cup of green smoothie for breakfast and that gets me thru about 3-4hrs before I feel like I need something else. I made a lot of mushroom and avocado dishes too in the beginning which helped with the fullness.

Please eat when you feel the need to eat. The food is so healthy that there is really no need to second-guess yourself. After your body has started to accumulate and use more vital nutrients from your living foods menu, you will notice that you are not as hungry -- or at least there will be longer intervals before your stomach starts growling, lol!

YES YOU CAN! Encouragement is one of those things that if given at the proper time, can really take a person far! Hey, its not the end of 2010 yet, if you have ANY dreams or resolutions that you want to have fulfilled, you can initate them now!! i told myself that I would get certified at least at level 1 before the end of 2010 and I am getting all 3 completed! Its really amazing when you make a decision how life realigns itself in support of it.

Rawk steady! Have a great time uncooking!

Hello EVERYONE!!!

WHAT an INCREDIBLE DAY....DAYS...I've had!!!!! I just completed my 1st Alissa Cohen Level 2 Class!!!!!

Here is the link to see the photos from the CLASS:

http://rawfoodtalk.com/showthread.php?t=62495

During the 2 Days, I gave my student a treat by fixing a few things from Alissa's NEW Book, Raw Food for Everyone!!!!!

Here are the photos of what I made:

Wild Mushroom Fettuccini - SOOOOOOO GOOOOOOD!!!! Her Hubby REALLY liked it!!! It made a LOT of Sauce, so all I have to do is make more Mushrooms and Noodles and I'm all set! This reminds me of the one in LOLF, but the Saffron made it really taste yummy! The Salad on the side is leftovers from when she made Alissa's Enchaladas! We had filling left over, so we just put it on a Bed of Lettuce:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Ann%20LEVEL%202%20CLASS/XDay2MushroomFetticcuniwsalad.jpg

I cut the noodles 2 ways to see which way I like better. Here is with the Veggie Peeler:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Ann%20LEVEL%202%20CLASS/XDay2Pasta.jpg

Here is with the Saladacco (spiral Slicer):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Ann%20LEVEL%202%20CLASS/XDay2Pasta2.jpg

DEFINITELY go with the veggie peeler! I also made the Tomato Ravioli for my Student too...which she LOVED! I finally found Yellow Tomatoes for that!!! Here it is again with the Enchalada (which is also in RFFE...)

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Ann%20LEVEL%202%20CLASS/AnnsLEVEL2CLASS020.jpg

We also made Alissa's Vanilla Macaroons, but I forgot to get a photo of it...CAN YOU *BELIEVE* THAT!!!! :-D

Ooh gorgeous pics Renee! I am so glad you had a great class! You are such an incredible teacher and mentor - plus you have fun and like to play with your food, which is awesome!

i have quite a few things in the D-HI right now and hope to have them done in the morning.. Crab Cakes (LOLF) and Banana FLax crackers

earlier yesterday I made the asian cucumber salad and some basic butternut noodles with basil, olive oil, coconut oil, sea salt, and nutritional yeast. Hubby liked them both -- thought the squash was carrot -- crunchy and sweet! Little Kem had a few noodles, but he played with it mainly.

Im hoping he will eat some flax crackers when they are done -- he's been really picky with food lately. The only things he is willing to eat are fruit, green smoothies, nut milks, and a few crunchy veggies, oh and sweet potatoes. I have managed to sneak all kinds of veggies in with his green smoothie, so I dont feel too bad, but he doesnt chew enough food for me over a 24hr period... Any recipe suggestions for a 19 month old? I just got a book called "baby greens" and will try a few recipes from there..

mhmmm maybe I can make him an enchilada... sure looks good!
Blessings!

When you have your dear Hubby taste the Banana Flax Crackers, put some Almond Butter and Agave on it!!!!!!!! He'll go "BANANAS"!!!!!!!!

If I had a 19 month old, I would DEFINITELY let him/her taste EVERYTHING I made right out of the Food Processor!!!!! With the exception of Flax, everything is so tastey....especially when you make the insides for the Enchaladas!!!!!!!!!!!!! Before you give him/her a sample, taste it yourself, smile and say, "UMMMM!!!! This is yummy!!!! Want a taste?" :D Also, let them press the button on the food processor! My kids LOVE to help me out...AND it motivates them to wanna eat the goodies!!!!!!!!!!!

This is really a commendable job, I would say that its very much helpful and , I would appreciate the piece of work done by you.

Thank you so much Annie!!!! I really appreciate your kind words!!! :)

Hi there! Alissa sells really RAW Oats on her site! And, you can get them inside of a week, which is GREAT!!! The Oats in the store is not truly Raw... I did NOT soak them. They would probably be mush if I did... Plus, there is a paste you make that holds it together nicely, which is more than enough liquid. The Granola is FABULOUS!!! I've made it 3 times already this week!!!!!!!!! :D

I can't WAIT to do the Lasagna!!! Thanks for the tip!!!

Hi Tryingtogoraw!!! I usually soak my fresh Dates a couple of minutes or so before I use them for a recipe. ...not too long, though, a couple of minutes at the most... If I have previously frozen my Dates, I will soak them a bit longer. HOWEVER, in Alissa's Date Nut Torte recipe there is ****NO NEED**** TO SOAK THE DATES OR RAISINS AT ALL.... I have a VERY high turnover with Almonds and I keep mine in Mason Jars. Some people keep theirs in baggies, just do what works for you... I also soak and Dehydrate them and keep them sealed for recipes.

The Broccoli Salad is in Alissa's NEW book...

Hi ReneeH! *waves*

thanks so much for the toddler info --- i gave little guy some banana crackers with almond butter and agave -- and he loved it!!

next time I will get him more involved in the prep process because he is more likely to eat things he has seen made in front of him... when I make lunch and put it into his storage container he is more "selective".

Love the class pics, btw -- as if you couldnt tell, lol!

Im off to make a few dishes and finally upload some pics this morning.

ReneeH how do you eat a persimmon? Do you eat the skin and all, just like an apple? I just made the broccoli salad, so I am going to have some of that tonight with the rest of my turnip ravollios, which are really good. I will have to try the parsnip mash, they look delicious! How long do you marnate your mushroom for? I try it and it was really salty. Thanks!

I was fixing the Ravioli tonight, but with homeschooling I got too busy to fix it. But, I've got leftovers from yesterday, so I'll prob make it later tonight for tomorrow or in the morning...

To eat a Persimmon, you DEFINITELY have to let it get ripe...actually probably over-ripe, well to the point where it feels almost like a soft tomato inside. Otherwise, it's REALLY bitter. You can just pick it up, wash it and bite it whole; or u can cut them into quarters.

The skin is edible though, but not everyone may like eating with the skin...I actually don't, so if you don't like the taste of the skin, u can peel it before eating.

Persimmons aren't ready to be eaten until they fall off the tree. Taste one. If it's sour or bitter, don't eat them yet. Persimmon pudding is one way to serve it that will probably be a winner, especially if you make it into a pie. Just type in "persimmon pudding recipe" and you should be able to find one.

*******************************************

For the Mushroom, I used a recipe here on RFT....here's the link for the Marinated Mushroom Recipe, posted by Carmella and RawFoodTable.com... It's WONDERFUL!!! Been using it for simply YEARS now!!! Make sure you scroll down...Carmella gives you a FEW to choose from!!!

No when I remember you not married or boyfriend in picture. Awesome about baby. Soon you'll be a great mom. Hope easy delivery. Do the eating program that works for you. I've been pretty much raw for tons of years, but eat a little plant based vegan. Aging and feel great when most up there like me are medicated heavily. I can't relate to that talk but doing Zumba and turbokick box rocks. Probably oldest in most classes, but feeling so young.

Wow those pictures from your class Renee are awesome :) How fun! I also made the vanilla macaroons.... Oh Lord they were good. I ate them all within 2 days myself!. I had the large flake coconut... YUMMMMMM. Everyone must try this if you love coconut. They are like mounds without the chocolate. Actually I put a little raw coco butter in mine and they did have a bit of a chocolate taste.

I have everything ready for Hawaiian pizza today. I had to sub the black plums in the BBQ sauce for red grapes though. The sauce tastes awesome with the grapes. Just have to make the cheese today. I am going to skip the "feta" since it already has blue cheese dressing and I just don't think the extra cheese will be necessary for me. My 2 year old ate the pizza crust batter with a spoon out of the food processor... I was shocked. He was "helping" scoop it out and had 2 or three big spoonfuls. He is picky so this was a big deal. So cool.

I am also going to make some more candied pecans and try the grawnola in the next day or so. I have been really enjoying the two burdock tea morning drinks daily. Had to order the herbs but I am loving them,

My 2 year old ate the pizza crust batter with a spoon out of the food processor... I was shocked. He was "helping" scoop it out and had 2 or three big spoonfuls. He is picky so this was a big deal. So cool.

make some more candied pecans and
try the grawnola in the next day or so
I have been really enjoying the two burdock tea morning drinks

OOH Janice -- those menu recipes sound so cool! I am intrigued by what you have found your toddler enjoys, as I am having a selective 18month old as well. I am going to try and incorporate him more into my preparation. He always loves green smoothies, but I want to do other things for him, so i am excited that your little one has taken to "helping" himself :)

I have been making things but I have been eating like a pig and havent been taking pics of it ;) Can you say BROCCOLI SALAD X3! I have been eating it almost everyday since I made it, and made some more, lol!
Now I am on an avocado skin and date nut torte kick, lol... I promise I will post some pics before I leave out of town..

rawk steady everyone!

You *GO* LADIES!!!!!!!!!!!!!!!!!! You are both doing a FABULOUS job!!!!

(((HUGS))))

Good Afternoon Rawbies!!!

This morning I made another batch of RAW Granola....Per REQUEST from my kids!!!!!!!!!!!! Because my Son is allergic to nuts, I made a "no Nut Tray" just for him:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/RAWFoodNov2010013.jpg

They are REALLY loving this Granola!!! I've got to order more RAW Oats cuz I'm all out now!!! After that, I made Alissa's Crepes with Lavender (I was out of this so I just omitted it) Coconut Cream:

Here's the Banana Leather with Rosemary:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/RAWFoodNov2010014.jpg

When you make this, you really need to put the Coconut Cream on the plate first, because when the crepe sits on it, the filling will help it to soften (just like the Banana Crepes in LOLF with the Strawberry Sauce...).

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/RAWFoodNov2010012-1.jpg

The kids didn't like the Leather with the Rosemary in it...prefered just the Banana for them. I really liked it!!! My daughter REALLY loved the Coconut Cream!!! I used a Vita-Mix so it came out really creamy! SOOOO GOOD!!!

I also made Cashew Shrimp for later to put on a Salad when I go to work:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/CashewShrimp.jpg

What's everyone else making today from Raw Food For Everyone?

This is from LOLF. Thought I post since I made a pumpkin pie with the blueberry cheesecake minus the blueberries for the topping, then swirl around on top of the pie with the mixture made from the chocolate turtles minus the walnuts. I really had fun making this tonight, now it's chillin in the fridge ready for Thanksgiving tomorrow!!! :)

My camera really doesn't take very good pictures of food. It always slightly a different shade of something else. I'm proud of making this so I thought I share. ;)

I had a piece for breakfast and it's good!!! :) I can't wait to share it!! Now I just have to not eat the whole pie before I get a chance to share it!! LOL!!! :p

Definitely enjoying it!!! :D

The heart in the middle of the pie happened naturally while I was letting the mixture drip from the spoon while swirling on top of the pie, <3!!! It's cool, it happened that way!!

I felt beauty-ful after making this pie too!! :)

Be full of thanks today!!!

Kids & hubby didn't care for it... Don't think they liked the papaya...though the liked the Steaks.... Go figure...

Been resting most if the day... Had to work all nite. I put more Papaya steaks in the Big "D" cuz my best friend wants to taste it....

All I've had today is a Banana, orange, the Smoothie, and some dehydrated Sweet Potato Chips, and a handful of Almonds. I'm still too tired to do anything...just gonna stay here in bed...............zzzzzzzzzzzzzzz

Hi Rawbies!!!!!!!

Today I'm STILL lovin' my Granola!!!! I had it this morning with some Almond Milk!!! SO Good!

For lunch I made Pomegranate Salad (RFFE, page 268). OMGGGGoodness!!!! This is the most fabulous merinade!!!! I could just drink it!!!! The Pecans add a nice flavor. It's simple and delicious!!! I did not have a juice press, so I cleaned out my Garlic press, squeezed a little at a time till I got a 1/4 of a cup, and it worked just fine!

Loved all the photos. That pumpkin pie looked so yumilicious.

I made the Hawaiian pizza. It was very good, but my FAVORITE part is the Blue Cheese dressing.... PEOPLE, you have to make this. It is amazing! I used basil for my herbs. I ate it in my celery today.... Goodness. Somehow it tastes like Blue Cheese.... not sure how but it really does. I am hooked on this book. Excellent recipes.

hi everyone -- i know I am overdue for pics, but my aunt is in the hospital with shortness of breath... possible heart trouble..

i just wanted to wish everyone a heartfelt thanksgiving -- hug and kiss and love on everyone you know :))) Life is TOO SHORT...!!

I am rocking a green smoothie right now, hubby and baby are asleep.. I think everyone seems to have a fast in their system.. no one has eaten much today, strangely enough.. perhaps its the news about my aunt..

Lovin all the new pics! Oh and Miss Renee!! Are you making the papaya steak in the Big D using the cold smoke method or just warming it up in there..? I saw a previous post that you were basting it.. but wasnt sure if that your "proprietary" process.

Blessings Everyone! Keep rawking steady!

okorolina40, I'm so sorry to hear about your aunt.

I think you have the two papaya recipes confused. The papaya steak is not smoked, thats the smoked papaya.

The one that Renee is referring to is the papaya steak that goes into the dehydrator.

Warmly~

Yea, Matt's right... I didn't need to do the Cold Smoking for the Papaya Steak. I hope you get to make it! It's one of my favorites now!!!

Just had more Granola Cerael with Almond Milk (gotta remember to soak more Almonds tonight....(note to self).....or I will be eating dry Granola tomorrow....

Leftovers again tonight...flyin' the friendly skies again tonight....prob won't get to make anything new till Monday or Tuesday. It's hard when I get a stretch of worknights in a roll. But it's ok, because I have plenty to eat from what I've been making this week! :)

Hey Rawbies!!!

I've been in my kitchen this morning!!!!!!!!!!!!!!! I'm making RFFE's Angel Food Cake!!!! I made the Coconut Milk on page 108 (pictured her with my Almond milk--I make about every 2 days or so...especially since I've been making Alissa's Granola!!!!):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000519.jpg

Here's Step 1 and 2 of the Angel Food Cake:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Raw%20Food%20for%20Everyone%20PHOTOS/1000000518.jpg

Hey Alissa...I wish you had put the Raspberry Sauce FIRST so it could have been dehydrating!!!!!!!!!!!!! But, oh well!!! I'll still make it and love it! I'm probably not going to dehydrate the Sauce for 2-3 days the way the recipe says to, because I'm hosting a RAW lunch with friends tomorrow and I need it for then...so it will dehydrate all day today. I'm making a LOT of food so that I have enough for everyone to try different things...

Here's my menu for tomorrow:

Appetitizers: Sliders (from RFFE)
Entree': Enchaladas w/Marinara Sauce (from RFFE--prob will demo Zucchini Pasta, too)
Side: Broccoli Salad (from RFFE)
Bread: Gluten-free Onion Bread (using Coconut Aminos)
Flax Crackers (from LOLF)
Dessert: Rich Brownie Sundae (from RFFE), and YES, I'm making the Gelato!!! :)

Angel Food Cake (from RFFE)... ***O.K...I'm NOT sharing this!!! It's ALL MINE!!!!***

AAAAAHHHHH!!!! A FEAST FIT FOR A QUEEN!!! :D

A bit super sweet for me! But my kids LOVE it!!! ......Of Course!!!

****AND****

Look at what else I made!!!!

Strawberry and Mango POPS!!! It's the Strawberry Sauce from Alissa's Banana Crepes (LOLF) poured into Ice-Trays and frozen... Then, I added some fresh Mango to the Vita-Mix with a but of Strawberry Sauce and poured that in too...!!!

Nee: I am not very precise with the soaking of the Brazil nuts. I just take them out of the freezer and soak them for 4-8 hours. I love the creaminess of this milk. It is rich and creamy and really good. I made an ice cream from Brazil nut milk that was heaven. Try it :)

I have finished making almost everything I need for my lunch with my friends tomorrow!!!!! I just need to make the Marinara Sauce, which I will make in the later morning hours!!! :=) I made my Hubby a plate "to go" for him to take to work tomorrow....well, today...:o

Here it is!!!! I will take better photos tomorrow of each dish so you can see up close when I have my lunch with friends! But, here's Hubby's food for now! I made: Enchaladas (mini ones!!!), Calzones (mini ones!!!), Broccoli Salad, Sliders, Flax Crackers, Onion Bread, and a Chocolate Brownie (for the Brownie Sundae...I already have some Vanilla Mint Coconut Gelato in the Freezer!!! So, no need to make that...)

When I made the Broccoli Salad and made the Mayo....OH MY GOODNESS!!!!! It's SOOOOO GOOD!!! It tastes JUST like MAYO!!! It's AMAZING!!!

Boy, the Brownie brought back sweet GREZZO MEMORIES for me!!!! Hey Alissa, remember when you brought it out and my EYES almost POPPED out of my HEAD!!!! LOL!!!! I only hope that I can make mine tomorrow as pretty as yours was at Grezzo!!!

Renee, right on for getting the word out on the radio!! I'm so excited for you!! :)

Thanks for letting me know about the almond flour, I really had a heck of time getting the almond flour to stick so I threw all the onion rings into the bowl of the almond flour and stirred it up that way. And next time I need to be sure to cut the rings 1/4 inch or the onions will be overpowering! Other than that, It's good!!! I really like the almond flour recipe that I would like to use for whatever calls for the fried tasting dish.

OMG!!!!! These onion rings are extra good extra dehydrated!! (18 hrs in total)I left the onion rings in over night. Just woke up now and had a bite, it's extra crispy!! I'm gonna dehydrate these next time 24 hrs in total. Just keep in mind that for me the dehydrating time is always longer than the recipes. I think it has alot to do with where I live. And gonna make sure that the onions are dry as in dehydrated, so much sweeter that way!! I'll def make these for lunches!! Everybody's gonna be so interested in these. They're so tasty that no raw ketch-up is required!! I had the rest for breakfast!! :D Here's a pic of what it looks like extra dehydrated!! Yum!!!!!

I am sorry if this has already been asked, but is RFFE heavy on dehydrator items? I don't have a dehydrator, so I am wondering how useful the book would be. Do you think her dehydrated recipes, like burgers, cookies, etc. would be okay fresh? I am happy to disregard cracker and bread recipes because I never eat them.

Renee..

I just have to say congrats on being on the radio! How awesome is that??!! I'm originally from the Houston area so I know that radio station! I keep thinking that the next time I'm in H-town for visiting family I'm going to have to take a day and meet up with you for a raw meal together or take one of your classes if you are doing raw food prep classes! you are such an inspiration!

I love how you manage to continue raw even when you are flying, travelling, and working!

I was wondering... do you feel like you are spending a lot of money on ingredients though? that's one thing I always felt... that making gourmet raw food is fun and IS very delicious but it can be pricey!

thanks .. I'm keeping up with this thread even though I may not be commenting all the time! You're a rawk star! :D

I got my book today, and it looks fantabulous!!!! I can't wait to get started on some of those recipes in there. I still don't have a dehydrator yet, but I just received my food processor (ended up getting a brand new one free through my bank card rewards program!), so now I can add more variety to my raw lifestyle! I can't wait to make a nut pate. YUM!!!!

Yesterday I got my copy, first I was like, uups very rare pictures, but now I like it. Be honest, what was always the problem with cookbooks, the result, what we made normally never looked like the professional foto in a book.

I just flipped through the pages and I already know, there is a lot of interesting stuff inside.

Thanks Alissa!

Woohoo Renee! Congratulations!

I have my almonds sprouting for almond milk and (paste for angelfood cake).

Based on the information about the spoiling of Renee's cake, I am just going to make a raspberry sauce to go over the frosted cake.

Got buckwheat sprouting for Calzones and will make enchiladas today. I think I will add jalapeņo and cilantro to my veggies.

I am going to repeat my question again because it seems to have gotten lost in the thread ... is this book heavy on dehydrated recipes?

RawHealthyBeauty
12-05-2010, 09:56 AM
Shona ~ I'm guessing it's 50/50. There's a very good generous amount of non-dehydrated recipes in the book which to my surprise is very nice, because I don't really dehydrate very often. I do when I feel like a change of pace of raw.

Thank you, whoa-raw! That's good to hear. I don't mind eating dehydrated recipes fresh - well, aside from the cracker and bread recipes obviously. LOL

I love this thread, and yes I LOVE PICTURES!!! I think they are important and I love that everyone keeps taking pictures so we can all see whats what. It seems those are the recipes that I make first.

I made the granola and cannot keep it in the pantry because my son keeps feeding all his friends!! LOL But they ALL LOVE IT!!! and want me to make more! LOL

Tonight is the first night feeding my family all raw for dinner. I am so excited!! I have my hubby and two sons ages 19 1/2 and almost 18. The only one who really is on board is the 19 year old.

My menu is Sliders pg 240 with Blue Cheese dressing pg 279, Sunny Burgers pg 336, Sunflower bread (from Ani's Raw Food Essentials pg 24),Broccoli Salad pg 276 and for desert chocolate, raspberry, pistachio, vanilla macaroons (from everyday raw deserts-Matthew Kenny)!

Now after taste testing everything... the sliders are really good but the sunny burgers are awesome!! I have to confess I am a blue cheese dressing hater but made this cause ReneeH said it was good.... ITS GOOD!!! I love it on both burgers.

I'll let you know the consensus after dinner.

Have a great day everyone!!

HELLO...HELLO...HELLO EVERYONE!!!!!!!!!!!!!

I know...I know... You're sitting there saying, "Gurl, where in the WORLD have you BEEN!!!" LOL!!!!!!!!!!!!!!! O.k..., here's where I've been:

ONTARIO, CA
SAN FRANCISCO, CA
ARIZONA
LOS ANGELES, CA
PORTLAND, OR

Yea, I've been GONE...literally!!!! It feels good to be back home!!! I can't WAIT to make some new dishes from RFFE!!!

Actually, I was *TRYING* to *SNEAK* up to Maine to see Alissa and pop in on Okorolina's Class!!!! But, alas...I was not able to make it!!! It's been such a LONG workweek for me...and I am super exhausted!!!!!! I haven't been able to post at ALL!!! So, I went back in the thread and tried to catch everyone's comments:

OMG!!!!! These onion rings are extra good extra dehydrated!! (18 hrs in total)

That is SUPER GREAT!!! I'm so glad that you like them as much as I do!!!!

I am sorry if this has already been asked, but is RFFE heavy on dehydrator items?

Hi Shona!!! I'm so sorry that your question got lost in the thread!!! Thanks Whoa-Raw for answering...yea, I'm inclined to agree... About 1/2 are dehydrated recipes... But, you know what? If I didn't have a dehydrator, I would STILL make some of the recipes that called for it because you CAN refrigerate some things to solidify them!!! And, you CAN eat some things as a pate!!! Now, things like the Papaya Steak, you might get by with refrigeration, but of course it's gonna be heaps better in the dehydrator. Some have tried to use the oven, but that wouldn't work very well for me... You know Shona, I got my first Dehydrator from Walmart for $40...! And, some have gotten theirs from thrift stores and garage sales! So, keep your eyeballs peeled...

I just have to say congrats on being on the radio! How awesome is that??!!

I was wondering... do you feel like you are spending a lot of money on ingredients though? that's one thing I always felt... that making gourmet raw food is fun and IS very delicious but it can be pricey!

Hi Luna! Thanks!!! Being on the Radio was so much FUN!!!

As far as ingreadients...honestly, I don't think it's as much as you might think... I don't buy meat anymore... I don't buy processed food anymore. My family does eat some SAD from time to time when DH buys it, but for the most part they eat waht I eat. I also make 1/2 recipes! Sometimes, I'll even 1/2 the 1/2!!! AND, I don't even REMEMBER the last time I was sick!!! I mean, really sick... So, I haven't needed to go to the Doctor or buy meds...so, that's money used for Raw ingredients!

I will remain in lurk mode for the next few days, because *drum roll*
I'm in Kittery with ALissa!

I AM SOOOOOOO HAPPY FOR YOU!!!!!!!!!!!!!! I *KNOW* you are having a FABULOUS TIME with Alissa!!!!! Can't wait to keep reading this thread to see any updates!!! (((HUGS)))

How COOL is THAT!!!! I am SO excited for you!!! Yea, I love pictures too! The Sliders are SUPER AWESOME!!! One of my favorites for sure!!! Your menu sounds GREAT... With the exception of Onion Bread, I'm trying to stick to RFFE in my recipes, though...especially for this thread...;)

Oh I forgot to ask, I am making the Calzones next and when the recipe calls for buckwheat.... do they mean buckwheat groats?? That's all I could find.

Yea, that's what I get... I use what I can get and I don't sweat the "small" stuff...

Are you saying that there are not many photos in the new recipe book? Don't people understand how many of us will not buy a recipe book unless there are photos:( I am disappointed.

AAAAHHHH Snoops!!! Don't be that way! Woo...Woo...Woo!!! It's O.K.!!! There are a few photos, but I like that when I make a recipe it comes out the way "I" want it to...not trying to fit what I'm making into what someone elses looks like... Hey, make your OWN book! Show people what YOUR food looks like! So what if it's not exactly like Grezzo's! I don't think that's Alissa's point...if it was, she would have put every photo in there...:)

My husband, Steve is giving raw a try again and is in the kitchen making the onion rings!!
I am excited to have my chef back. Hope he stays with it!!!! :D

Meeeeee TOOOOO Terry!!! Just have plenty of RAW on hand for him to nibble on...I mean, *FILL* your Dehydrator with the "easy" stuff from Alissa's book: Fruit Leather, Star Anise Papaya Steak, great start with the Onion Rings, you know...things like that...

Well we had dinner and the consensus is.... my oldest son loved it but didn't taste the broccoli salad (hates broccoli), my youngest son only liked the broccoli salad but said it had a weird aftertaste and my hubby said it was surprisingly good and filling! YEAH!!!

Let your Oldest Son taste the Corn Chowder! It's quick, easy, and delicious! Most broccoli haters LOVE it! KUDDOS to Hubby! Hey, my DH LOVES Alissa's Collard Roll (from LOLF)...you should make that for yours! My DH always eats *2* when I make it!!!

Welcome back Renee!

The enchiladas were great! The tortillas were so easy and yummy!

I decided to use just raspberries for the middle layer of the angelfood cake instead of jam, which turned out delicious and makes this cake a breeze to make. The cake is very sweet so the tartness of the plain raspberries was a great match. I also put some coconut on top of the cake to make it more white instead of light brown. Plus, I LOVE coconut. Thumbs way up for this recipe. It is super easy. I put it in the dehydrator before bed and this morning made the quick frosting. I cut the pieces and froze each separately with some extra raspberries for my lunches this week. Happy.

Today the Calzones.

QUESTION: I froze some of the enchilladas. Do I have to thaw all the way before putting it in the dehydrator next time I eat this, and does that ruin the texture or make it really soggy?

ReneeH
12-06-2010, 11:16 AM
Hi Janice!!!

I'm so glad your Enchaladas came out great for you! I've actually never froze them before...I've kept them in the fridge & had leftovers, but not froze...

The Calzones are great to freeze...I just go from Freezer to Dehydrator a few hours B4 I wanna eat. I'd probably do that for the Enchaladas too...though neither are gonna be exactly the same the 2nd time around...

You're doing SO great! I wish we could do a potluck! Boy, that would be a HOTTT ticket!!!!! :)

Thanks for your comments, Renee. I don't mind my raw foods in fresh form - I get to eat them quicker! :p I can see how a dehydrator would be useful for some things. I keep my eyes open when I'm out and about, but I haven't come across one yet. Someday ...

Thanks Renee! I am afraid to keep these as leftovers too long because of the long dehydration time and worry about it going bad pretty quick, so I froze some. Plus, it is just me that eats these and I can't keep up with all the food :)

The Calzones came out INCREDIBLE! YUM!!! I was very skeptical about the curry but used it anyway and it is great. So glad I tried this and it came out perfect first time around... great recipe! Thanks to all who talked it up :)

How FUNNY!!! I thought the same thing the first time I made it...I was NOT a Curry fan...as a matter of fact, I left it out and hated the Calzone! Then, about a year later I made it again WITH the Curry and now I can't live without it!!!

Here's my FAVORITE Photo of my Calzone: (As you can see, I make mine a LOT smaller than Alissa makes hers, but it Dehydrates faster and it's more managable for me...

Great photo! I halved the bread and forgot to half the insides, so mine was really full. I won't forget next time, but it turned out delicious! I used chantrelles and brocolini... mmm. I ran out of olive oil so used coconut butter for the mixed veggies. It tasted fab with the curry. It was that or no oil, and I might just keep it this way in the future because it was so good. It might help it keep its shape better in the fridge because the coconut butter hardens so much? We'll see.

ReneeH

I'll definitely have to try it with the Coconut!!!

Alissa does hers pretty full too...here's the photo of Alissa's from Class:

Here's Alissa cutting the "finished" Calzone in Class... As you can see, hers is pretty thick and she makes it in a 1/2 moon shape (as she says in the book) and makes slices of it for everyone... I do mine like RawKnitster does hers because it's just more practical for me...

Nori Crackers (I put the Sesame Seeds on the top...):

Then, I cut them:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000537.jpg

But, now I see why Alissa put the seeds in the Batter....they fell off!!! LOL!!!

These are SOOOO Good!!! Surprised me, actually!!! I didn't expect to like it!!!! But, I honestly couldn't stop "nibbling"!!!!

Mushroom Pate:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000538.jpg

The Mushroom Pate was good...not crazy about the texture, though...I suppose when I refrigerate it, it will firm up more for me... I had it with the Carrot & Celery Sticks and I had Alissa's Flax Crackers with it too...

Oh, I put some Candied Pecans on it...YUMMMMM!!!!

Today I'm making the Papaya Steak for a friend of mine... I started another thread about it because the papaya "stinks" to me for some reason! I guess that's normal, but I don't know...

Anyway, I'm also in the process of making Jambalaya (the last time I tried to make this, my Wild Rice did not sprout and I left it out too long...not pretty! So, this time I think I'm just gonna soak it...) and Falafel, which looks pretty easy to make. What's everyone else making from RFFE? :D

Hey yau'll!

I made Alissa's Apricott Strawberry Cookies... (I think that's what they're called, I'm upstairs in bed & my book is downstairs...). They are sweet, and delicious!!! I put a batch in the freezer to firm up fast, and it worked!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000541.jpg

Yummm!!! :)

The Papaya turned out as yummy as the last time I made it! And, after it dehydrated...no more "smell"!!! Go figure!!! ;). I ate it with some Raw Corn, avacado & sea salt on the side...basically Alissa's Corn Chowder minus the Almond Milk.....SO GOOD!!!

So, I'll do the Jambalaya tomorrow! Nighty nite Rawbies!!!

Hey hey hey!!!!

Im back -- ok, so Ive been back for over a week, but I had to get some things done for school and baby (hubby is not the greatest at cleaning up after a toddler, so the house was even messier than when I left!)

I just have to say, after going to Alissa's LOLF training, that:

1) I know more about myself and my potential than I could ever thought to understand in 3 days -
2) there IS really a difference between 95% raw and 100% raw. I definitely felt a difference, not only while I was there, but when I got back. I had a random non-organic raw snack and eww... it was like my tongue had detoxed or something... perhaps the snack was cooked and I didnt know it..

3) I met the most amazing people and although we all came together to learn raw foods, we learned so much more! OF COURSE, the FOOD WAS AMAZING!! I made almost all the recipes for Level 1 before, but MAN, they seemed to taste even better at Alissa's, lol! Thats when you know that love really goes into the food.

Gosh being in her B&B was SOOO INSPIRING -- I am pursuing things that I have wanted to do for years, and... the universe is approving the details. Several things are in the works, including a monthly raw brunch and potluck that I wanted to do to share the raw lifestyle!

Ok, so I know this is a RFFE photo thread, so in order to be in compliance, I have to have made something, right? Its been enchiladas all week, but I did manage to squeeze in the asian cucumber salad

http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4739.jpg

and here is my toddler drinking some coconut water, which he loves, just like mommy (never mind the pseudo cheerios --- he usually dumps them on the floor and tries to count them!)

http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4748.jpg

I did have some random butternut squash with olive oil and sea salt... as a side to the salad.. -- i made angel hair pasta with it with the intention of doing the curried noodles, but I didnt have everything so I just winged it.

I'm feeling very much like doing a short 1-2 day fast, especially as we are going to be hit with crazy snow tomorrow (5-12 inches are possible)

Thanks Renee and Monkapotous(sp?) for the well wishes and blessings! I would have been totally pysched if you stopped in --- oh that would have taken the cheezecake ! The calzone was AMAZING and Soooo do-able! I am sprouting the wheat berries right now... then I will sprout some rye and get that ready for bagels..... OMG Alissa made the onion dip --- i was putting it on everything!! IT was the ultimate sauce!

Alright -- more to come soon! I have to change my siggy and get some things moving along, woohooo!

Blessings and rawk steady!!

Hey Gurl!!!!! I've been looking for you!!!!!!! I'm so glad you got home safely from Class!!!!! Your Son is just too cute for words!!!! What a Sweety-Pie!!!!

I really tried to get off from work to pop up there to meet you!!!! I was so bummed that i couldnt go! I love going to see Alissa! She always seems so humbled that I take planes, trains, and automobiles...just to go see her!!!! I have been able to do SO much since Alissa's Class...all because of the motivation I received from her! Every time I go see her, it inspires me! Did you take lots of photos? I'd love to see some of what she made from RFFE!!!

Guess what? I'm beginning to think we were separated at birth!!!!! I was JUST thinking about doing a fast too!!!! Honestly!!! I've been making some WONDERFUL meals, I know! But I feel kinda "heavy"...yea, and my snacks don't help.... I took a Raw Brownie for a snack tonight at work on the airplane. Here it is with a Strawberry on top...

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000544.jpg

But I balanced it with Jambalaya & Salad, so it's ok... ;)

SOOOOOO...I have an idea!!! Let's do a feast or a fast using only Smoothies or Juices Alissa suggests in Raw Food For Everyone!!! What do you think about that? We can take photos still of our drinks!!!! I'm SOOO excited now!!!! I'm gonna start tomorrow!!! (You KNOW me, can't WAIT to do anything!!!!). I'm gonna start with a week and see where I go from there!!!

HUGSSSS!!! Welcome HOME!!!! (Home on RFT, I mean!!!). ;)

oooh a juice/ smoothie feast! OMG - I am SOOOOO THERE!!!!

Thanks so much Renee for such a great suggestion!! I am glad I have found someone like -minded (bTw I did tell Alissa that you said hello and she started giggling and said "oh i just love REnee' she comes to see me all the time!!" heheehe!)

YEs i am thinking of not only starting a juice/ smoothie feast, but also doing some youtube vids of some of them ;) hmmm.. A few online friends have "requested" that I start a YT channel with raw food prep tips and things...!!
WHo'd have thought it! I have a few names for videos/classes... I will need to pm you for more input..

Yes indeed! We can totally start today!!

Im off to the car service place right now, but I will be drinking coconut water for most of the day.. when I get home, I will make my ABC Green smoothie - then I will mobilize materials for the feasting!! QUick question though, are you going to have a Christmas raw spread, or will you be feasting thru it?

Just checking ahead :) I want to do at least 1wk of juice/smoothie feast..
I took lots of pics at the training, not nearly enough of the food, though! I detoxed quite a bit on Day 2, so the lunch break was spent napping... but I will get my blog going so I can post pics -- another thing to do, but totally feasible!

rawk steady everyone!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000549.jpg

Sunflower Seed Pate on Alissa's Flack Crackers!!! I made the Pate w/o nuts so that my Son could eat them, since he's allergic...

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000547.jpg

Cucumber Rolls!!! These are FABULOUS!!!! They're not in the Book, but I felt "creative" today!!! They were just too pretty not to share!!! Just take a Cuke, use a melon baller to hallow it out, then fill it with the Pate! I also put slices of Avacado inside and some I put a piece of Nori inside! These were a HUGE hit! Even SAD eatin' Hubby had several:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000546.jpg

(I also posted the above photos in the "snacking" thread...

I also made the Falafel from RFFE!!!!! BEYOND great!!!! Gonna put them in a wrap or Salad tomorrow:

LOL - you're so funny Renee! I was thinking the same thing this morning -- I think I will definitely commit to two smoothies a day though, then other dishes to fill in!

today I made the mudslide drink in RFFE - i added 1tsp of ground cacao nibs - it was the PERFECT chocolate milk - at least for me - i am not big on chocolate... you chocoholics need to make the chocolate shake (1 cup of cacao powder -- wheeeeewwww too much for me!) but this was perfect for breakfast. Reminded me of SAD ovaltine flavor when I was a teenager.

http://i1220.photobucket.com/albums/dd459/afibanaturals/RAWK%20STEADY%20-%20food%20photos/CIMG4906.jpg

meanwhile I warmed crab cakes and enchiladas from LOLF with onion dip from RFFE and hubby ate marinated mushrooms with olive oil sea salt and nama shoyu... was too lazy for guacamole topping.

Im very full now..

I decided to venture out into the world of sunflower seeds and made a seed yoghurt (from SProutman's kitchen garden cookbook). I blended 2 cups of sunflower seeds in the vitamix till thick and creamy, then let it sit for 24 hrs in a bowl with a cheesecloth on top... it seemed to grow quite a bit, bubbly and lemony taste.... not much whey/liquid in it though....

put a bit in the fridge, then dehydrating a section to see if I can get a firmer cheese....? added a few chopped onions...

muuuahhhhhhhahhhhahhhaaa - we'll see how the cheese turns out!

lol- rawk steady everyone!

I just ordered a book called Raw Food For Everyone. It was written by someone named Alissa Cohen. Has anyone heard of her? :p

I couldn't resist! :D

Now comes the hard part ... waiting for delivery. I am hoping it will arrive the end of this week, but it may take longer because we're getting close to Christmas (which I keep forgetting about, for some reason). My daughter said I should wrap up the book and not look at it until Christmas Day. Um, yeah. I don't think so! :)

Alissa's Asparagus wrapped in Eggplant Bacon!!!! This is a MUST make!!!! SOOOO incredibly Good!!!!

I also made Spicy Buffalo Tenders from RFFE!!!!! I had to FORCE myself to stop eating the batter!!!! I'm gonna be watching the Big "D" like a HAWK!!!!!

I am also going to be making the Lasagna (RFFE), Chili (LOLF --I'm craving it), and more Grezzo food...so, stay tuned!!! :)

I'm out of Flax Crackers, so I made 2 trays of them (Garlic/Ginger from LOLF), and a batch of Onion Bread...(I just love the smell of it!!!!!)

Photos when it's done....

Renee,
So I just got my dehydrator, and I am getting ready to go grocery shopping. How do you do it? How do you plan, because you make so much! I love it, and I want to do it, but how do you do it? How do you time what you want to make and want to eat? Any suggestions would be greatfully appreciated!

LOL!!! I know, right! Believe me, it's REALLY Eggplant! I thought the same thing when I first saw it at Grezzo!

There's a recipe for Eggplant Bacon gloating around on this site, but Alissa's is simpler and just as yummy! Try it! :)

Ok, I just got in from working all night! I'm writing this for those of you (like TryingToGoRaw) who wanna know how I do this....

Let me back up, ok yesterday was payday (YEA!!!) so, I went to Whole Foods and got more Staples: Nama Shoyu, Agave Nectar, Vanilla Beans, veggies, fruit, etc.... Before I went to work yesterday, I made a quick Salad and put the Asparagus wrapped in Bacon on it to take to work and eat on the plane. That took 10 minutes to make. I also grabbed my last piece of The Brownie (RFFE) from my freezer, and a Nut and dried fruit snack mix I made up, and put it in my work bag. I left the Tenders in the Big "D" and had DH turn it way down to 90-95 degrees because they weren't ready yet. I flipped the Flax Crackers and headed to work.

That brings us to this morning. I just re-wrapped some Bacon around mpre Asparagus and Garlic Sauce and put it in the Big "D"....so I can eat it when I wake up for lunch with my Tenders. The Tenders dried out just slightly (which I expected since I had to leave them in WAY past the time Alissa says...couldn't be helped....there is only SO much I trust DH to do!!! :)), but they are simply FABULOUS!!!! Here are my Buffalo Tenders from RFFE:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/Mobile%20Uploads/1000000552.jpg

Aren't they BEAUTIFUL!!!!!!! Alissa, you never cease to amaze me!!!! How in the WORLD does these taste JUST like "chicken" is BEYOND me!!!! To say these are fabulous just doesn't seem to be enough!!!

Ok, I'm gonna get some sleep now, since ive been flying all nite. I'll make the Blue Cheese Dressing that goes with these when I wake up!

Nighty-Morning everyone!!! :)

Hi everyone - i've been green smoothied these past few days - i have two final papers due this week so I have been keeping it simple BUT Mrs. Renee is just making me (and others I'm sure) salivate!

I happen to already have some eggplant and i do have lentils that need sprouting....

just made a bunch of Rejuvelac so I am hoping to hunker down some Grezzo cheese blends to store for future goodies this weekend. Alissa made the dill-scallion blend at training and it was awesome!. Any ideas on how to store the cheese when made? I want to find those ice-cream cartons that are used at the shops... but not sure where to get those...

Anyways, I hope to have some decently crisp eggplant bacon this week to munch on, along with a few more desserts.. My cheesecake was not as sweet as I would have liked, seriously thinking how I can re-vamp it into a fruit-creme or something...

Blessings! Have a great day!

Thanks Renee! So how can I take your class? Also can you tell me where I can get sundried tomatoes? I can only find ones that are in jars with olive oil. Also is there a website that you use to order your seeds from to sprout? Because I want to make cookies and bread, I did find a website and I did order from there, but I was just wondering where you order from. I would love to take your class, if there is a way to do with me in PA, and you in Texas. If there is a way I would love to do it. Okay, so when you turned your food way down was that because you new you wouldn't be home in time? Also I don't have pine nuts because they are way expensive, is there any kind of substitute for them?

Ok, I'll answer these one at a time...

Thanks Renee! So how can I take your class? I would love to take your class, if there is a way to do with me in PA, and you in Texas. If there is a way I would love to do it.

Actually, I am one of the few (if not ONLY) Alissa Cohen Certified Teachers who IS able to travel to you to have your class! I do charge a fee to come to you, though. Just send me an email and we can discuss the details. Another option is that you could come here (no fee for that, and there is a hotel close by where the Class will be held). If you're interested, contact me and we'll see what would be the best option for you..

Also can you tell me where I can get sundried tomatoes? I can only find ones that are in jars with olive oil.

Well, I get mine either at Whole Foods or you can order them from Alissa's site. I have to be able to get mine from a local source, or this lifestyle would be out of reach for me. I'm not above going to HEB or Fiesta, but I try not to get them Sulfered, canned, or jarred. You have to do what's best for you. You can also Sundry your own!!!! That's always best..

Also is there a website that you use to order your seeds from to sprout? Because I want to make cookies and bread, I did find a website and I did order from there, but I was just wondering where you order from..

Again, Alissa has a GR8 site!!! She even has free shipping from time to time and I get my orders fairly fast. You can get truly Raw Oats there...(reminder to self: order more!!!). I'm not above using the ones at Whole Foods, though... I don't sweat the small stuff...

Okay, so when you turned your food way down was that because you new you wouldn't be home in time?

Yep! They still needed to dehydrate, and I was hoping that they wouldn't dry out too much...and they're ok! I put them in a baggie which softened them a bit too... Sometimes that trick works... That's about as muck as I'd trust my DH to do Raw Food wise... I shudder to think of him trying to flip it!!! All I can see is the dogs licking it off of the floor!!!! LOL!!!!

Also I don't have pine nuts because they are way expensive, is there any kind of substitute for them?

Well, that depends on what you're making... If the dish has other nuts in it, just increase the amount of those nuts to compensate. Certain dishes I can't imagine without it, like Alissa's Eggplant Pizza in LOLF....one of my favorites! But, even then you could try Sunflower Seeds or Pumpkin Seeds.

For me, Pine Nuts are a luxury I splurge on from time to time...I don't use them too often either. Remember, Alissa's Recipes are guidelines...you have to do what works for you!

Hope that helps! Thanks for trusting me to answer your questions! What an honor! :)

Try looking in the produce section of your supermarket for sundried tomatoes. That's where I get mine. They come completely dried in a cellophane packet. For seeds, do you have a natural foods store of bulk store nearby? They are usually pretty good for raw nuts and seeds.

I live in Downingtown, PA....which is 45mins west of Philly. Maybe we can work something out. I will email you Renee. How do I do that? i do have a whole foods store near me, that I can check. My two local grocery stores don't carry the sundried tomatoes. Lets see if we can work out a class with all of us. That would be gr8! You can come to my house to do it, if we all live close to each other.

I only wish mine looked as good as Alissa's does in the book! I noticed her layer of cheese (probably Grezzo's) is a whole separate layer, but the directions say to add the cheese in with the tomoatoes, which is what I did. Anywho, it's absolutely fabulous!!!!! I made mine with the Quick Cheese...

You food list looks Gr8!!!! Yea, I always fo my Lasagna noodles the long way... Gives me more of a "Lasagna" feel. I think the rounds will give it more of a "Pasta" feel to it, which is totally fine! I'm sure it still tasted yummy! :)

If you do a search, you'll see it... It's got it's own thread (Calzones). I'm on my phone and my search won't work on here...should be easy to find...

I actually started out with a $40.00 Walmart special dehydrator. Then I upgraded. Now, I've got 3! I love my 9 tray one the most! I use um all, too! And, my best friend brought her dehydrator (5 tray) here, so that I can make her food too when I uncook! So, I really use 4!!!! Yea, I know...crazy, huh!!!! What I *Really* need is a Cabella model like Alissa had at Grezzo!

Can you imagine the possibilities!!!!!!!!!!!!! :)

I have to work again tonight! I haven't been able to make anything new in few days... Just been too tired after flying all night and sleeping most of the day. Then flying out again...

I've been sticking mostly to salads and leftovers, which get tastier the longer the flavors marinate. Alissa's Eggplant Bacon has been saving me! I've made the Asparagus several times and using it for BLT on Romaine! Yum!!!

I'm craving more Brownies...gotta make some more tomorrow!

Been sticking to fruit only when I'm on the plane. I've been taking Bananas, Pomogranets, pineapple, strawberries...

I'm missin' Grezzo's Granola!!!! On my to do list when I get in tomorrow!

Keep rawkin' RFFE yau'll!!!!

Yep! I've made them a few times and they're fabulous!!! Gotta make the Gelato for the Brownie Sundae too!!!! To live for!!!

Tonight I made Pupusas!!!! I've never had the SAD kind, so I had nothing to compare it to... So, hopefully I did it right! I didn't know if I should use Brown or Golden Flax Seeds... I went with Brown, but wish I had done it with the Golden. RFFE doesn't show a preference in the recipe, but I should have probably checked the front of the book...

I'm getting things together for a possible Alissa Cohen Level 1 Class in Pittsburg, PA in FEBRUARY!!!! We'll see!!! For all the Pittsburg, PA Girls, gimme a shout out email and let me know how many are interested! ;)

you can probably sub coconut aminos (WF has them), or in the absence of that, tamari. i think the aminos are raw though, whereas tamari isnt. i havent actually had the aminos (both bottles i bought leaked and i didnt think taking them on the plane to europe leaking was a good idea...), but they are supposed to taste similar to soy. id steer clear of braggs aminos though, as they seem to be questionable. use only the coconut aminos, or else use tamari

Hey Becky...you don't live in PA? It says "Downtown PA" by your name??? Where is that? I was hoping you'd be there!!!! :(

Nama Shoyu can be ordered it from Alissa!!! Unfortunately, *ANY* substitutions won't make it taste like the original!!! I've done it with Braggs and Coconut Aminos before. Coconut Aminos is great for people who want Gluten free... Tamari might work too... We'll talk....maybe I'll even ship some to ya!!! ;) Yea Kaybee is right...Braggs isn't "Raw"...neither is Tamari. Coconut Aminos says "Raw" on it...

I'm planning to start the Master Cleanser Fast on January 2nd, 2011 for the entire month!!! So, I'll probably be on the Fasting thread mostly. I guess Alissa doesn't sell Nama Shoyu anymore!!! I thought I remembered seeing it in her store...

I actually love the smell of it dehydrating! But, then again, I love the Onion smell...

I'd LOVE it if you could join me fasting!!!! Will you do M/C, juice, or feasting (Smoothies)? It'll be a blast!!!! Don't forget to visit the fasting thread! :)

I would love to drive up....however I don't have anyone to watch my children. I don't live near any family!:(

I am not sure which fast I am going to do. What is the M/C one? I know what the other ones are.

I guess I will have to look online somewhere for the Nama Shoyu.

Hey Becky!

I just emailed you with the possibility of doing the Class right in YOUR home! Yep, I'd come right to you!!!! That way, your kids could be there with you!!!! Check your email!!!

If you will Google Master Cleanser by Stanley Burroughs, you can read all about it. The book is cheap too...I got it at Whole Foods for $6.95.

I'm gonna hop over and post on the fasting thread while I'm fasting, though. I'd like to keep this thread focused on Raw Food For Everyone. :)

I've been enjoying my Pupusas!!! :) I especially LOVE the breading! Reminds me of Alissa's Banana Flax Crackers marries her Enchalada Bread and have had a girl baby named Pupusa!!!! :p

I'm gonna be starting my M/C fast on January 2, 2011...but until then, I will continue to make yummy things from RFFE!!! I have some Granola (RFFE) in the Big "D" right now, and I have a Demo Class I'm doing today, so photos are coming!!! Stay tuned!!! :)
