i made a few batches of raw seed and nut cheese (cashew and sunflower). many times it went out ok but the last one im not sure about it. it tastes a little bit funny...

what cautions do you take when making nut cheese? im concerned now that summer is coming, (southern hemisphere here ;) about bacterial growth, and potential issues that may arise from having something alive at a hot temperature...

I don't know about anyone else, but personally I like to challenge my stomach with lots of things lol.

I'm never too worried about these sorts of things, if it tastes ok, then eat it. Our ancestors recent and not so recent contended with this all the time in the days of no fridge or mod cons and they tended to do ok on less than perfect food.

Also, noticed you are in the southern hemisphere too, which country? I'm in Australia in Melbourne, bring on the warmer weather!!! :D
