Someone posted a recipe from another site on making coconut-meat yogurt. I've searched all over and can't find the original thread, so wanted to add a few comments as well as thank you for inspiring me to make some.
It was simple - coconut meat, a little lemon (I put a few drops --I thought the oiginal recipe had too much), probiotics and let sit in a warm place for a day or so --on top of the running dehydrator worked wonderfully!
I just loved it. For my first batch, I used a spoon of homemade dairy yogurt, as well as the probiotics,because I wanted to get all the synergistic ingredients. From now on though, I can save some of the original and use as a "mother" - as well as a little probiotic powder. For strict vegans, you could probably just use a little from your first batch as a mother, I'd guess.
Anyway, I'm in Ohio and I don't readly have access to cheap young coconuts so tried my hand at using truly raw organic dried coconut to blend with water and make coconut milk, strained, then added a tiny lemon and probiotics. It made a great drink, but since I want that thickness of yogurt, and since i'm trying to up my chia seed intake, I'm going to be adding some chia seeds to make a yogurt pudding.
When making other chia puddings, I've used chia to liquid at a 1 : 3 ratio, so I'll just add 1/3 the amount of chia to my yogurt "smoothie."
Will let you know my results! Can't wait to try this. Jumping the gun at posting before I try it, while thinking of it.

p.s. You know? It's not really coconut kefir...it's more in a liquid yogurt or smoothie category, but I couldn't change the title. The title should read "Coconut yogurt smoothie turned pudding" or "Coconut Yogurt Pudding from Coconut Milk"....or something like that. I can't change the title.....
