How do you tell if a pineaple is ripe....do you go by smell?

There is really no way to tell if a pineapple is ripe, some are yellow, some are green, some are golden, you can try to smell it, like most fruits, but until it is cut, it is difficult to tell.
I go by how dry the stem is, if it is moldy, I don't buy it, if the pineapple is hard, it is better, it should not be soft.
It should be sweet smelling, and have fresh looking leaves out the top, if they look dry, it could be good, but it isn't as fresh as one with crips green leaves.
Unless you live where they grow, it's really hard to get a fresh ripe one, so just do your best, I have no problem taking them back if they aren't perfect, so I usually buy one when I want one, and if it isn't perfect, I pop it into the freezer and take it back the next time I'm at the store. I live way out of town.
you can also ask the produce manager, to cut one open for you, and try it, then take it home, or get another one that he picks to take home.

If you can pull off one of the stems easily, it is ripe.

Go ahead and buy the pineapple slightly green. Take it home, poke the bottom stem end with a fork, as far as you can push it, sit the pineapple in a bowl of water (about 3/4"), add a sprinkle of dulse if you have it (to help get more minerals in it), sit it in a sunny window until you see no more green, and it smells wonderful. Cut and enjoy!!!!
I do this at least twice a week. Then cut it in forths and juice one of the forths every morning upon waking. It is suppose to be great for helping clean one's liver. Eat nothing before or for one hour after. It helps clean out all the fat consumned the day before.
Honest, this is superb!

A produce department employee told me this once, and it really works. If you pull on one of the top stems and it doesn't come out, try another pineapple, I usually have no trouble finding one where I can pull one out easily. :)
