Squash soup!

Butternut preferred...

Or you can make a pumpkin pie! Minus pumpkin... Be creative. I imagine you can do it just by imagining tastes in your head! DO IT!

I like to take squash and slice them in thick slices and dehydrate them. You could marinate it in some nama shoyu and some salt, maybe a touch of honey or other sweetener and have little jerky treats. yum

Is it okay to use the outter layer of this particular squash? At this point I don't thinks so.....They really are a beauty though.....:D

The little dumpling squashes have a lovely flavor, but the rind is pretty grooved, so is a bit of a pain in raw recipes. The rind won't hurt you, but it is pretty tough. So it is a good idea to use a peeler to peel as much of it off as you can before you use the squash. If you are blending it, you don't need to worry about some bits of rind left in the grooves. If you get a lot of peelings, you could try juicing them.

Thanks for the tip about peeling them. Sweet Dumpling Squash juice sounds very good!
I've never tried them before. Hmm...hmmmm....it's good to know it's lovely! :)
It still in my fridge, haven't made anything with them yet.
Do you know of any recipes that I could make with them?

My taste buds are saying they would make a great rice for an Indian or Tai dish....with coconut milk and red pepers and pineapple and curry....and maybe some cashews too :)

Beautiful little squishers!!

Ooo I see it now!!

I would make a Nut/Date/Cocoa crust and throw the inners of the squash in the blender and add Carrot juice to soften the squash in the blades and add sweet flavour and go nuts with spices. I love pumpkin spice! Add some dates to the mix and pour the mix over crust and put it in the fridge for a few hours. OMG.. Im hungry (Darn juice fast)

Can you eat Acorn Squash raw?
I bought one in Dec. before I decided to do the 30 day raw challenge. It is sitting on my counter waiting for me
to eat him ;)

Thanks!!
