Hi ~ I haven't made it yet, but when I do - I'll be following the instructions here (http://www.rawmazing.com/recipes/raw-recipe-almond-butter/#more-4157) (great photos here too!). *Ü*

I'd love to hear how it works out for you. Those that have posted after following her directions all say it worked very well! *Ü*

I will definitely let you know how it worked out. Can I ask you how long you have been raw? I have only been raw for a week and I am getting frustrated. i can't find items that i need to make things out of cookbooks, like Alissa's book. I mean I can't find pine nuts, or macadimian nuts at three grocery stores. I just feel like all I am doing is making green smoothies which are good, but i want to try other things. I also make a lot of the desserts. And I think I am eating too much fruit becuase I am getting ucler's in my mouth. sorry I just had to get this off of my chest. Thanks!

Hi ~ I've been eating this way for almost 3 years now. It was a process for me to find products and which stores carry what products. Some products are just not available here where I live, so I order those (not many though).

I don't know what state you're in or if you're on their route - but you might be interested in Azure Standard (http://www.azurestandard.com/). Their route is very extensive, so that might be an option for you.

I place an order with them monthly and then their truck delivers it to a nearby "drop off point" where I go to pick it up. There's no shipping fee which is great! I order a LOT from them, upwards to $200-$300 per month - things that I cannot find locally.

Have you been eating a lot of pineapple? I know if I eat a lot of it, it will make the inside of my mouth sore as well.

Have you visited the recipe section here? I love having a BIG salad for dinner - non-lettuce salad though. I have green smoothies and green juices during the day, so by evening, I'm wanting something different :)

when you say non-lettuce what do you put in it? I use baby spinach. I have just started eating pineapple, that might be it. I live in PA. I am going to try that website and see. Thanks for the information. I have been doing green smoothies, but I always forget the green juices.

Here's just one example of a non-lettuce salad. This is one of my absolute favorite salads! I was going to make it for my dinner tonight, but we had a raw food meetup and I no longer need any dinner tonight - yum! I'll make it tomorrow though...

You can watch Paul make this on YouTube. My tweaks are in (...) This is one of my personal favorites.

Spanish Rice - Paul Nison

1 head (1/2 head) of cauliflower, grated in a food processor
4 green onions, diced
2 tomatoes, diced (I usually add more tomato)
1 orange bell pepper, diced
1 (1/2) jalapeno pepper
2 tablespoons fresh lemon juice
1/4 cup cilantro diced
1 avocado mashed in
1 teaspoon chili powder
1 tablespoon paprika
1 (1/2 tsp) teaspoon sea salt or to taste
1/4 cup cold pressed extra virgin olive oil (I use less - 2T or so)
(I add at least 2 tsp ground cumin)

Mix together well and serve. As a side dish, serves four.

YouTube video of this salad. (http://www.youtube.com/watch?v=dVTgdMKDY5g)

Paul states that this is: from my favorite raw recipe book how we all went raw. You can buy at http://www.rawlife.com

Thank you for the recipe for the non-lettuce salad. I will have to try it this week. I made the almond butter, I did add the honey and the salt. It was soo good!! I am not sure if my food processor liked it very much, but it was good!! Thanks!

I'm so glad it was good! And it's GOT to be so much cheaper than buying it. One of these days I'll try it - there are SO many things on my future list (sigh), always something new and exciting to try!

Here's another favorite salad that I make, I actually crave this when I don't eat it often enough - Massaged Kale Salad (http://www.youtube.com/watch?v=xlpy2RcsOtc). I love watching YouTube videos on raw food prep & recipes! *Ü*

Here's a favorite non lettuce type salad that is great ...
Todd’s Waldorf Supreme

2 Apples, chopped
2 Tomatoes, chopped
2 Avocados, chopped
1 Orange or yellow sweet pepper, chopped
½ Sweet onion, chopped
Handful sprouts (alfalfa, radish, etc) (optional)
Small drizzle of olive oil
Pinch of sea salt
Dash of cayenne pepper and onion powder

Combine all ingredients.
Proportion the ingredients according to your taste … more or what you like best, etc. Many times I leave out the tomatoes or peppers. Still great.

Also good with chopped strawberries.

The secret to this recipe is to Stir Stir Stir Stir so the avocado gets distributed as a ‘dressing’. So your avocado needs to be med-soft.

Many times I don’t have sprouts … so just leave ‘em out. J

You can sub raw cashews for macadamia nuts. In fact, I like them better.
Right now finding pine nuts is a chore -- and if you find them they are running $29/lb!! I don't know a good sub for pinenuts ... if anyone out there does, please chime in.

I hear you on the pine nuts. I'm making pesto right now and paid $20 a pound for them. My husband calls it my $40 an ounce pesto...

I haven't tried it, but he's asked me to make him some pesto (I use Alissa's recipe) and sub walnuts for the pine nuts. But I probably won't be doing that until later this week or next.

Switching gears - I love the recipe you posted on Todd's Waldorf Salad, I make it quite often. What I do and it works great (if you're not squeamish about getting your hand right in the food) is to put in the avocado and smoosh it in with your hands. It works so much better I have found than trying to incorporate it with a spoon, a lot quicker.

I do this though before adding the tomato as it would smoosh it too.. I hope you don't mind me posting this link (http://www.youtube.com/watch?v=zDEaCWUOLVI) to it on YouTube levamssg. *Ü*
