i have a doubt on buckwheat, the only store that provides it around here has it on 2 versions:

whole, which is kind of brown (looks like this)

peeled, lighter brown

i bought the peeled one just out of instinct, but which one is the one that is broadly used on raw cuisine? do you soak it and eat it right away? soak it and dehidrate it?


any help would be useful

Hulled, raw buckwheat is what I use. Mine is lighter in color with a slight hint of green, no brown at all. I'm wondering if the hulled buckwheat you have there is toasted? If it sprouts, then it must be raw.

Rinse and soak in water for 6-8 hours. Drain and rinse. Put in a colander and cover with a tea towel or paper towel. Rinse 3-4 times a day for 1-2 days. It should sprout little tails. Once the tails appear, put it in the dehydrator to dry or in the fridge. Sprouted buckwheat will keep in the fridge for a few days. If the tails get too long or turn green, it will be bitter.

so you can eat it with the hull, no problem?

No, we mean we eat the hulled one. xD I've never before come in contact with the unhulled kind.
