can you make cabbage chips from green cabbage, or even red/purple cabbage?

Non, dried cabbage might be good. I made some dehydrated brussel sprouts, another brassica, and thought they were quite good. The sulfury taste mellowed and they seemed to sweeten up a little bit, while retaining a little of the heat or mustardy flavor they have. I think I had marinated them first with a little Apple Cider Vinegar and lemon or lime juice. Flavor the cabbage with what you like first - savory, spicy, sweet. I believe I've also added finely chopped cabbage to my kale chips. I don't usually work from a recipe so they vary in construction materials a lot. I think it'd make a good chip with maybe another green mixed in to sweeten it or mellow it.
dehydrated cabbage didn't work too well for chips.. at least some of them.
I guess, any green with big stems don't work well, as stems have too much fibers around them and don't let air penetrate them, so they retain water. It's best to rip them apart and cut out big stems. And cabbage can be so thick that they just dont work too well, maybe if you put holes in it with a knife it would work better.

I take the stems out of kale when making chips, too. Don't know about cabbage getting crisp. If it does, it would take a lot longer than kale. I've tried a dehydrated napa cabbage at a potluck. The person that makes it puts a sauce of nuts and oranges on it and softens it, but does not dry it crispy. It is interesting, but I wouldn't bother trying it at home.
