Just want to say for those who haven't heard: stuffed mushrooms are amazing.

I didn't have the ingredients to make Alissa's pesto, so I just made my own and used her as a basis. I used about 2 parts almonds to 2 parts walnuts in the food processor with olive oil and water to get it moving. Seasonings were salt, white & black pepper, basil, rosemary, oregano, thyme, paprika, coriander, and a dash of cayenne. I had leftover filling so I just put patties of it in the dehydrator with the mushrooms and rolled it's warm yummy goodness into lettuce wraps after we devoured our basidiomycota. Kid and mum approved. :D

Edit: Eek, meant for this to go in food prep. Can someone switch if please. ^^;

I'm ready to harvest my basil plants this week and make this up. I make up Alissa's pesto in the fall - it freezes beautifully!

I just bought my pinenuts today - wow, almost needed a second mortgage for those! Why have they gotten so blasted expensive??

And now Costco has stopped carrying them (whaaa!) *Ü*
