I was at a farmers market this morning and learned something about eating bee pollen that I had never heard before. It was explained to me by the vendor I got some local (to flagler florida) tupelo honey and pollen from, that you should crush the pollen first. She said you only benefit from about 10% of it if you just take it whole, while smashing or running it through a spice mill/coffee grinder provides closer to 90% of it's nutrients to you. She suggested also to then mix it in an equal part (50/50) of honey to keep it from oxidizing. Evidently the hard outer shell of the pollen grains themselves is hard enough that it does not easily break down in our guts.
Makes perfect sense, but I was surprised I had never heard that before. I've eaten pollen through several different periods over the years, too. Another lady there said she crushes by placing it in plastic wrap or wax paper, rolls a can over it,and then mixes it in warm water to make a tea of sorts.
