Hi,

Im going to be making a raw pizza and need some tips on marinating the mushrooms. I saw one recipe that was just marinating it in nama shoyu for a few hours. What marinades do you use to marinate your mushrooms? I'd like to dedicate this thread for marinated veggies. So list your recipes :) Thanks

I like marinating my sliced mushrooms in a little olive oil, nama shoyu (or tamari, it's so much cheaper) and minced garlic. So good, it's hard for me to stay out of them as they're marinating.

I even marinate whole mushrooms in this that I'm going to stuff with pesto using Alyssa's recipe. I like the end product a lot better when they're marinated first. I marinate the whole mushrooms overnight in the fridge. (same mar. as above) *Ü*

Makes enough marinade for about 1 1/2 cups sliced mushrooms (or one large Portabella)

1 Tblsp Nama Shoyu (or equivalent)
1 Tblsp water
3 Tblsp olive oil
1/2 tsp ground cumin
1/2 tsp dried thyme


Whip, shake, or blend together. Add sliced mushrooms. Stir quickly to coat. Let sit at least 10 minutes.
