papaya made gelatin...

I cut up some papaya slices and put them in a bowl and in the fridge and I noticed it developed a gelatin-like substance on the bottom...

I presume that it is caused by pectin. I wonder if Papaya can be used to thicken a pie in the same way that blueberries and persimmon can.
