Hello :)
Soooo, as I said in my intro post yesterday, I'd lapsed 13 days into being raw vegan, and it was quite obvious why. I'd told myself that I'd happily sacrifice taste and enjoyment for the health benefits, and as such was lazily making extremely healthy but extremely disgusting smoothies, and as well as that my salads were just a throw in of anything and everything, with no thought for flavour and texture combinations.
Today has been a GOOD raw vegan day. Lessons have been learnt and i've made an effort and it has been fantastic. Here is a breakdown of my day:
Breakfast smoothie - 3 Pears, 2 Bananas, Handful of Grapes, Generous chin of Ginger, a few pumpkin and sunflower seeds, and two handfuls of Kale... Lovely! Worked fantastic. Even gave a glassful to a friend at work and she really liked it, which wasn't happening in the first 2 weeks. I made about 1.5 litres of this and it lasted me from 8am to 3pm whilst I was working in a kitchen at the same time, and I had more than enough energy and no temptation.
Lunch - I arranged big slices of apple, carrot, celery, tomato, yellow pepper on a plate around a small bowl of a tomato, red pepper, chilli, garlic, coriander and paprika dipping sauce. It looked beautiful! And was very enjoyable. I then had a bowl of strawberries, figs and kiwi with some raw vegan chocolate.
Tea - I made a kind of nut pate. It had an avacado, cashews, almonds, brazils, yellow pepper, some of the dipping sauce from above, and some extra chillis (I like hot foods) which I then blended up and put spoonfuls onto baby gem lettuce leaves with some paprika sprinkled over. Again, it was amazing! Absolutely mindblowing!
Evening smoothie - I had an orange, sweet potato, banana, cinamon and ginger smoothie which will give my body some extra complex carbs for the gym at 7am tomorrow. This was quite bitty even though I blended it for ages, but it tasted very good.
Anyway, that is today. Very boring for you all to (skim) read lol, but i'm glad to have a place to document this and celebrate little triumphs, because I now know that enjoying this diet is vital for it to endure. :)
