It's great but simple.
One jicama chopped up
1/2 pineapple chopped up
2 ribs of celery- take a vegetable peeler along the bottom of the rib first and peel away that string so it's not so chewy, then cut it up.
*obviously you could easily increase quantity.
What do you think would be a good dressing to accompany it? I just eat it plain and sweet like that but want to dress it up to take it to a potluck. thx!

honestly, the flavors of the dish sound good enough to not require dressing.
i wouldn't put anything on it. i think the pineapple will give it enough punch.
perhaps also bring along a spectacular green salad & toss it in lemon & olive
oil to appeal to those who won't dig the primary dish.
raw desserts, especially chocolate, seem to go over well with SAD / non raw
potlucks. I've never missed the mark when I bring a dessert. :D

On second thought add raisins to the jicama/pineapple dish. There's your flavor pop right there. :)

Hey AllergyGirl, yes, lime juice is often something I use to wake up a recipe with. do you mind me asking if you've thought of using a name that doesn't identify yourself with a health problem?

Hrm, this may sound odd, but I made out a dressing out of cayenne pepper and fermented pomegranates with raw apple cider vinegar, and just a touch of raw sesame oil! I bet it would taste good on this...
