i'm using my dehy. a lot more right now because it is the end of the year and we have so much fruit to store.

tried peaches for the first time and since they just aren't that great I was doing big halves (flattened)

well you can imagine this was taking FOREVER

i woke up this morning and about half of my peaches had little white mold spots.

wasted fruit vs. saved fruit :(

but it got me thinking. i don't want to have this happening. 24 hours is my new time limit

ALSO: this may be common logic to most people but it has only recently occured to me that a dh works just like and oven. air needs to ciruculate so spacing even trays is important........???

I don't know what you have yet, I've heard of that happening with the round style "d's". Doesn't happen with my Excalibur.

First, I would check the temp and make sure you've got enough heat. Second, if bottoms are drying faster, may want to rotate them orrrr, pull the bottom ones out when they dry and drop the top ones down so they don't stay wet so long.
