I made butternut squash noodles the other day with a young coconut stir fry sauce. The noodles nauseate me-just the smell and everything.. I prefer the zucchini noodles. Anyway.. what can I do with it? I don't like to throw out food..

I was just about to post a thread about squash, not the butternut kind, the yellow summer squash. I was curious and tried eating it raw (after peeling). It was disgusting. Some vegetables are just meant to be cooked to be palatable....
I imagined that it would be more like a cucumber. But it was so dry. And there was a weird taste to it. I am new to raw foods.

I just did this with a butternut squash yesterday.. a friend gave it to me out of her garden. not tasty to me at all! I gave it to my MIL and she cooked it for herself, so at least it didn't go to waste :). Raw grated sweet potato is much more palatable.

You might find it tastier if you toss it with some olive oil and generously sprinkle on Italian Seasonings. My husband had a zucchini and yellow squash last night tossed in pesto. The oil in the pesto makes a big difference.

I would process it down a bit (assuming these are really long spaghetti like noodles?) and toss it in the freezer to add to crackers or bread batter. *Ü*

Here is a recipe for waffles (http://www.rawfoodtalk.com/showthread.php?t=54388&highlight=squash+waffles)made with white acorn squash. Only the shell is white, the inside is similiar in taste and texture to butternut squash. It should work. If not, then it would be a further waste of food.
