I WOULD LIKE SOME IDEALS FOR A RUM CAKE FOR MY 10 YEAR WEDDING ANNIVERSARY in October!!!!!! We got married in St Thomas, Virgin Island and would like to do a Caribbean celebration.
The chocolate banana cheesecake from cafe gratitude is a good place to start by changing ingredients.
The recipe calls for 1 cup of almond milk->-what I was thinking was to reduce it by 1/2 cup and then add 1/2 cup of rum, for the one cup of liquid.
My question is what do you think? DOES ANYONE HAVE IDEALS??????
Thanks in advance.

Happy Anniversary!

Are you going for flavor or the alcohol effect?

I ask because some people use flavored extracts in recipes (not I). If you are mainly interested in flavor, perhaps you could use coconut water with rum extract.

My grandmother makes a SAD rum cake using an entire bottle of rum (some in the batter, the rest poured over the baked cake). I have seen people get drunk as a result of eating it.

If I were challenged to create a raw version of my grandmother's, I would make a simple, single-layer "yellow" cake with almonds, coconut, dates, vanilla bean, etc. Then, I would add rum extract to coconut water and pour it over the finished cake.

That being said, I would not eat it myself because of the extract
