View Full Version : So many tomato's what to do?

I have a bazillion tomatoes from my garden. My poor neighbor's see me coming and they are shutting their doors and pulling down the blinds! LOL But seriously what can I do with all them.
The only thing I have made so far is marinara sauce (froze a bunch), dehydrated some of them and froze, made salsa (can you freeze salsa??) and thats it!
Any idea's?? Any other recipe's I can freeze and enjoy in the winter?

Send them to me, they're my favorites! :D Many tomato soups, wraps, salads, by themselves-yum, juice, sliced with cheese spread, salad dressing .
Soups: Celery Tomato with water or orange juice, Celery Cucumber Tomato
Cucumber Tomato, Mango Tomato, Sundried Tomato, Chili

Cut a tomato in half, then scoop at the seeds with spoon. Fill with pate/dip and enjoy. :) You can also try guacamole, gazpacho, and any salad (of course).

Thank you all that sounds yummy! Didn't think of soups or using them for shells.
Do you by chance know of anything else to do with them that I can freeze or something. I swear I have 50 on the table and another in the garden ready to be picked tomorrow.
My plan was to make salsa, that was before I went raw. I planned on canning it but now that I don't cook anything I just have soooooo many.

If it really became too excessive for you to eat all at once, I'd dry them. You could still use them in soups/sauces and stir them sliced into hummus. :)

That's what I am doing to do! Starting tomorrow all were going to hear in humming from the dehydrator for a couple days! :)

send em over....hahaha....Sun dry them or dehy yes! Awesome to have in the winter. I personally could not ever have too many tomatoes!
You can actually freeze them whole, with skins on if you would like as well. Once thawed, they'd have to be used in something blended ofcourse. They say the skins slip off once thawed too. *Ü*

I make a lovely tomato juice for dinner every night. Mmmmmm yummy. You could juice a bunch and freeze the juice. ;)

Mom's Gazpacho Recipe (truth be told, I don't know where she got this from, but she's been making it for years) -
2 lg. tomatoes, peeled
1 lg cucumber, pared
1 med. onion
1 med. green pepper
12 oz tomato juice
1/4 c. olive oil
1/4 c. red wine vinegar
1/2 tsp. salt
1/8 tsp. black pepper
2 cloves garlic, crushed and split
1. In blender, combine 1 tomato, 1/2 cucumber, 1/2 onion, 1/4 green pepper and 1/2 c. tomato juice. Blend to puree.
2. In large bowl mix pureed veggies with the remaining tomato juice, 1/4 c. olive oil, vinegar, salt and pepper.
3. Refrigerate, covered, 2 hours or until chilled.
Okay, so how do I do it? I start by blending enough tomatoes to get to 12oz. THEN I follow the directions. No canned tomato juice, whee!! And then use ACV for the vinegar!
