Hi...I will be attending a picnic and I am looking at what I can bring. I want to WOW the people with something great...BUT with ingredients I have.
The garden is prolific right now yet we have alot of several things, not a little of a lot of things...haha
So here is what I have...
Kale (boatloads) please dont recco kale chips as I dont like them heehee
Collards
Carrots
Beets
Parsley
Basil
Cukes
Mint
Oregano
I dont want to make a salad...unless it is a WOW one!
Any ideas?

you could use the kale and collards for wraps and make a yummy pate for the centre?
i'd take kale salad myself with julienned carrots, beets and chunks of cucumber with some sunflower/cashews etc sprinkled on top. but then... i like salad. ;)

You can use some or most in a salad and mash with avocado (added garlic and/or tomatoes, even tastier) or a really delicious dressing, also using some of those ingredients if you want.

Nope, don't c it. I disagree with your point. A salad may not be WOW to you, but a really good salad is something SAD eaters rarely get the pleasure of having.
The only other dish I see in those garden ingredients is a wrap. Chiffonade the kale and massage with lemon juice, olive oil and salt. Grate or julinenne the carrots, beets, and cukes. Chop the parsley and mint. Put it all together in a large bowl. Make a dressing of olive oil or sesame oil, lemon juice or ACV, tahini or almond butter, nama shoyu (or a substitute of the same flavor) garlic, ginger, and sea salt. Blend the dressing until smooth. Make it thick by adding more nut butter or olive oil. Stir in chopped basil and mint. Stir the dressing into the veggies. Let sit in the fridge for a few hours or overnight. The day of the picnic, roll the "slaw" in collard green and fasten with a toothpick. Put more dressing on the side for dipping.
I also disagree with you about kale chips. I've served cheezy kale chips to many a crowd of SAD eaters. Nothing WOWS a crowd like kale chips.

I have looked around. I am thinking cucumber sliced thin and long. Lay out flat and spread some yummy delicacy I make on there....say kale all made up with herbs and such.and a sauce as well....YUMMY and then roll them up and
decor the plate!
Like I said, my fellow rawbee is bringing a salad and it is a total cooked food crowd...I want to give them soemthing else to eat raw. Most think rawbees eat salad day in and day out.
woohooo glad I discovered this idea.
Thankx to all of you for helping.
