Hey everyone.. I've got a kitchen to myself for all of next week so I want to uncook up a storm so that I can survive my first month raw and get myself off to a great start.
I put so much effort into making Alissa's calzone earlier this summer that by the time it was done, I was drained.. and it ended up being super heavy (never modify before you try the real recipe once..) I only ended up eating about 1/4 of what I made and was quite sad.
Something I haven't really put the time into is sauces, and I feel like that would make a world of difference in variety and satisfying cravings..
I'm up for any type of meal.. just want to get the goods. Let me know what you've tried, tested and loved :)

1. Alissa's marinara - page 367. I sometimes add fresh basil to it, if I remember (planted some this year, it's so yummy), but mostly I forget.
2. Alissa's zucchini hummus - just made this for the first time 2 nights ago, and am trying to finish it off so I can make more, because I think I have an idea that will result in it being thicker. I am going to juice the zucchini first, blend everything, and then just add back in whatever amount of juice is necessary to make it the right consistency. I LOVE this though - at first I hesitated to try it, because me and regular hummus were like pb&j - inseparable, but holy crap this is good, and it really doesn't leave me feeling like "oh my heck I wish I had the other stuff".
3. RP brownies - do NOT substitute figs if you're out of dates, it is very disappointing.
4. Kale/avocado salad - video/recipe is on you tube, and I probably have the link somewhere.
5-10. I don't know yet, but I'm going to try Alissa's apple pie today, so we'll see.
**Amarryth - I've been waiting until it was cooler to make the calzones, and have been dying to try them. Are they not very good, or just a lot of work?

Orange dressing (LOLF)
Kale/avo. salad
Corn Chowder (search for a variety of recipes - the one I like doesn't have avo.)
Pea Soup (dito above)
Pad Thai salad and dressing (every book seems to have one - all a bit different. try 'em)
oatmeal raisin cookie (adapted and similar to almond cookie in LOLF)
brownies
Marinated Veggies (again lots of recipes, try til you find one you like) use them on salads
Banana ice cream
Kale smoothie: banana, mango, pineapple, kale, water or ice

Calzones are the BEST!!! Today, I'm making the recipe for the fifth time. It get easier every time.
I make one major modification. The first time I made it exactly as stated in the recipe. It almost covered the entire dehydrator sheet and was very thick. The dough was still gooey inside and had an odd flavor. I didn't really care for it and had issues the next day. I have since realized what happened. The flax and/or buckwheat had FERMENTED!
Now I spread the dough onto 6 dehydrator sheets. I let it dry completely, then fill. I rewet all the edges and press firmly to get a good seal. It dries perfectly, nicely firm and crisp. The best part is it makes 3 large calzones that can be cut in 9 pieces and picked up and eaten by hand.
You may have seen this pic before. I've got it posted several place here on RFT. Calzones are a process, but well worth the effort. Edited to add: Leftover slices can be frozen!!!

Well, the crust is incredible.. but when I started making it, I thought.. hey.. it's like pizza, shouldn't it have tomato? and i put like a whole LAYER of sundried tomatoes on it, in addition to too much (very salty) cheese and not enough veg.. didn't do the broccoli and mushroom layer at all...
I was only able to eat very small amounts at a time.. so I guess it would be great if you're looking for a way to take away hunger? Mega comfort food here.
There's a reason a recipe is the way it is.. I will definitely give it another attempt.. but my memory of it is way too intense for now.
It is many stages, but the ingredients are easy to find, and I can see the actual recipe being awesome..

Yeah, the whole thing was wayyy too thick as well. I think next time I'll 1/2 the recipe since I'm the only one in my house that eats even remotely close to raw!

Oh my heavens, RK, that looks amazing! I'm actually on the lookout for portable things that I can take to school (I'm a grad student), and that looks perfect! I assume that it could be frozen after being dehydrated, and then just thawed and eaten?

Funny you should ask, I just finished editing to add that it can be frozen. Be sure to eat it all or freeze it no later than the next day.

I've been thinking about trying one with a marinara/nut burger filling, but why mess with perfection. ;) Alissa is the queen of raw. :)

Number 2 would be Alissa's Pesto Stuffed Mushrooms. Everyone I have fed them to is crazy about 'em. Qualifies as simple, too!

RK, is there something that would work in place of nama shoyu (I have a soy allergy) and mushrooms (life-threatening mushroom allergy as well). I do like that coconut aminos can be used - I haven't buckled down and ordered any yet, but it's nice to know that there's something I'm not allergic to that I can use for the countless recipes that use Bragg's aminos.
As I think about it, what about small pieces of zucchini in place of mushrooms?

Coconut aminos is lighter and sweeter, but it would work nicely in place of either Bragg's aminos or nama shoyu.
I don't know about subbing zucchini. You could simply leave out the mushrooms in favor of extra broccoli. If you try the zucchini, I would chop it, then salt it and let the water drain out, then press it with a paper towel. Kind of like eggplant. Hmmm.... eggplant might be good in place of mushrooms. Do you have a nightshade allergy, too?

Nope, I'm fine with nightshades, but I've never, ever used eggplant, so I'm not sure how to work with it. That sounds delicious though - I say bring on the veggies!

It is way to make, it fills you up, it satisfies my need for a heavy meal, but with only a few ingredients so it isn't really heavy to digest. To me, it is comfort food. I eat it with cauliflower rice... I process the cauliflower in a food processor into rice grains and then mix with Ginger, almond butter, tahini and lemon juice. Add a few flax crackers, and you have a scrumptious Indian meal! There is a picture of the final result on my profile page. Enjoy! :)

I don't remember even coming across this recipe.. It never ceases to amaze me how Alissa's book was my first, back almost 5 years ago, and I still come across something new every time I look at it!

Marinated Eggplant:
marinade:
Bragg
Ginger
olive oil
garlic powder
cider vinegar
agave
Lemon-tahini sauce:
Mix:
2T tahini
1/2 lemon-juiced
agave to taste
Peel and cube an eggplant. Put in jar and pour marinade over. It's good after a couple of hours, and even better the next day. Serve on a bed of shredded carrot and our tahini-lemon sauce over
Golden Cabbage:
a raw version of our favorite vegan cooked meal.
Ingredients:
1 head green cabbage
4 tablespoon olive oil
½ teaspoon sea salt
¼ teaspoon garlic powder
pepper to taste
2 tablespoon nutritional yeast
Preparation:
shred cabbage. Add olive oil. coat well. add other ingredients. put in the dehydrator until desired softness
Gus's Rawlmond Joys
My 10 year old created this recipe after missing Almond Joys. This is so EASY and QUICK. I bring it to ALL my gatherings-even in the SAD world people love these.
Ingredients:
1 cup raisins
1 cup shredded coconut
.33 cup coconut oil
1 tablespoon agave (stevia DOES NOT work in this recipe!)
1 tablespoon powdered cacao
shredded coconut for rolling the bars
12 almonds
Preparation:
Blend raisins in FP until they form a ball. Add coconut and oil. Blend. Add cacao and and agave. Using your hands, shape into cubes. roll in extra coconut. Pressing firmly add 1 almond to each bar. Refrigerate for 20 min (or more) before serving.
Twelve Tribes Parsley Dressing
Servings: makes 1-2c
I had this recipe once while visiting the Twelve Tribes in VT. I couldn’t get enough of it! After 13 years I have finally cracked the code! It’s awesome as a dip for cucumbers and red peppers.
Ingredients:
1 bunch of parsley
1 lemon, squeezed
2 tablespoon cider vinegar
3 tablespoon H2O
2 clove garlic
1 teaspoon sea salt
stevia, or sweetener of choice-to taste
1 cup olive oil
Preparation:
Blend all ingredients-except the olive oil. With blender still running, add olive oil SLOWLY.
This one takes some time, but is WELL worth the wait. My hubby LOVED it and said it was almost as good as the "real" thing.
Spinach-stuffed "meatloaf"
Ingredients:
2 cup walnuts, soaked for 4-6 hours
1 cup almonds, soaked for 4-6 hours
2 stalks celery, chopped
½ medium yellow onion, finely chopped
1 clove garlic, minced
1 cup sun-dried tomatoes, soaked until soft, reserved 1 cup water
2 tablespoon chopped fresh parsley
1 teaspoon poultry seasoning
2 cup fresh spinach, washed and stemmed
2 tablespoon olive oil
juice of one lemon
2 teaspoon sea salt, divided
1 teaspoon black pepper
SUN-DRIED TOMATO KETCHUP
1 cup sun-dried tomato, soaked, 1/4 c reserved water
¼ cup raisins, soaked until soft
1 tablespoon Italian Seasonings
¼ tablespoon chopped onions
1 clove garlic
Preparation:
SUN-DRIED TOMATO KETCHUP
Combine sun-dried tomato ingredients in a blender until mixture is slightly smooth, yet chunky.
MEATLOAF
1 Place spinach, olive oil, lemon juice and 1 teaspoon sea salt Ziploc bag and marinate for 1 hour.
2 In a food processor, combine walnuts, almonds, sun-dried tomatoes, 1/2 cup reserved tomato water, parsley, onion, garlic and celery. Add the remaining 1/2 cup water one tablespoon at a time to moisten the meat loaf. Be careful not to over moisten.
3 Place meatloaf mixture in a large bowl. Add poultry seasoning, pepper and 1 teaspoon sea salt. Mix well.
4 Spread meatloaf mixture on a Teflex sheet into a shape into a rectangle 3×9-inches . Place spinach mixture on top. Roll up the rectangle carefully, beginning at the short side and using the sheet to lift.
5 Transfer loaf to a second Teflex sheet. You should have enough meat to create three mini loaves.
6 Cover with sun-dried tomato ketchup. Place in dehydrator at 115 degrees for an hour.
7 Make 1 inch slices of meat and arrange on the Teflex.
8 Dehydrate at 115 degrees for an hour. Turn over slices, spread sun-dried tomato ketchup and dehydrate an additional hour.

0. Melon: Take a melon of choice. Chop in half, and scoop out seeds in necessary. Continue to eat with spoon.
1. Kale/avo salad: massage an avocado into a head of kale by hand along with your favorite spices.
2. Guacamole: mash an avocado, add a chopped tomato or two, onion/garlic if desired, a handful of chopped cilantro, and the juice of half a lemon. Salt + pepper to taste.
3. Vanilla or Chocolate Shake: blend a bit of water with some ground vanilla bean, stevia/dates, a small handful of nuts, and about 3-4 frozen bananas or so (add cacao/carob to make it chocolate).
4. RP Brownies: in the food processor pulse together 1 cup walnuts, scant 1 cup dates, and 1/4 cup cacao
5. Spanish/Vegetable Rice: http://www.rawfoodtalk.com/showpost.php?p=622044
6. Wraps: Take a lettuce leaf and pile on your favorite veggies (guacamole works great) or roll the fillings into collard leave halves (cut out the stem and you have 2 wraps already)
7. Banana Ice Cream: in vitamix add a bit of water and blend frozen bananas into a thick mixture that's like a fluffy icecream (I like to add a pinch of vanilla and some lucuma) top with any desired toppings if necessary.
8. Mashed Banana: Place a few bananas on a cutting board and chop until gloopy. Put in bowl and mix in desired accompaniments (I like adding chopped pecans/walnuts, raisins, coconut flakes, and lucuma powder/cinnamon)
9. Carrot Yummy-Stuff: grate carrots in a food processor and place in a bowl, add chopped walnuts or pecans, raisins/currants/dried figs/etc, and a little of a sweetener of choice. I like to add some lucuma. :)
10. Alissa's Indian Spinach Dip: once made, dip in your fav veggies or put in wrap or cucumber boat

My son does NOT like mushrooms but he loves this recipe. In fact - he's not raw, but he told me he was thinking of buying a DEHYDRATOR to make them!

2. Calzone (One of the BEST recipes in LOLF!!! ...I thought this would be hard to make at first, but once you make it a few times it becomes 2nd nature!!!)
3. Corn Chowder (I NEVER get tired of this one!!!)
4. Pate with Flax Crackers
5. Angel-hair Pasta w/Marinara Sauce
6. Collard Roll (SOOOOO Good!!!)
7. Apple Cobbler (Easy to make and SO delicious!!! I love the Pecan topping!!!)
8. Snicker Bites (recipe on RFT!!!)
9. Marinated Mushrooms (or Stuffed)
10. Nori Rolls made with Jicima!!!

I love cooked mushrooms but marinated raw mushrooms I just hate - I don't know why. I haven't eaten mushrooms in a really long time b/c the last time I ate them they were the raw marinated and they freaked me out.

Yummy Apple Cobbler
All I can say to this recipe is WOW! If you are trying to make a really great impression of raw food with some non-raw friends or family, you should definitely serve this. It is as simple as it is delicious.
Serves 6-8
Pie Filling Ingredients:
5 medium apples
1/2 cup raisins soaked in water for 2-4 hours, or overnight in fridge
1/2 tsp. ground cinnamon
juice of half a lemon
2 T honey
1 tsp. vanilla
1/2 tsp. ground nutmeg
1/2 tsp. sea salt
Cobbler Topping Ingredients:
1 1/2 C pecans, not soaked
3/4 C dates, pitted and not soaked
1/2 tsp. sea salt
Preparation:
Peel and chop one of the apples. Place it along with the drained raisins, cinnamon, lemon juice, honey, vanilla, nutmeg and salt in a food processor or high-speed blender. Puree until completely smooth and creamy. Set aside.
Peel, core and slice thin remaining apples. Place slices in a large bowl and gently toss with pureed mix. Place in a medium-sized glass or ceramic dish.
For the topping, in a food processor pulse the pecans until finely ground then add the dates. and continue to grind until evenly mixed. Crumble an even layer of the pecan mixture over the apples.
Place your pan in the dehydrator at 115 degrees for about 4 hours. Serve with coconut creme or as-is warm from the dehydrator. This dish only gets better after a day or so, that is, if you have any left after the first serving.

Hey Deb...a little late with the recipe. I made flax crackers with all the veges and seasonings but the taste was over-powering. I like bland crackers. This is the recipe that I came up with to suit my taste and needs.
My Flax Crackers
1 cup ground flax
1 cup soaked flax (I soak in 1 1/2 cups water til absorbed)
1 1/2 TB nutritional yeast
1/3 cup water
1 tsp salt
1 lemon juiced
Fold all ingredients together. Spread on teflex. Score into squares and dehydrate til crisp.

Oh my heavens, RK, that looks amazing! I'm actually on the lookout for portable things that I can take to school (I'm a grad student), and that looks perfect! I assume that it could be frozen after being dehydrated, and then just thawed and eaten?
