View Full Version : Converting full recipes to trial size ones

since I'm trying to win my ds over to the rawside I want to take a few of the 'sweet treats' and make him a sample tray. but I'm not sure how to cut the quantities to a serving for one. if anyone could direct me how to that would be smashing.... here's what I've picked out thus far.
chocolate turtles
walnut fudge
date nut torte (I have cute little tart pan I am going to use)
spicy refried beans (he loves these when I allow us to eat at the Mexican Rest)
carrot pecan burgers (I want to make him one to try)

One thing I read somewhere (Jennifer Cornbleet's book maybe) is that some recipes really shouldn't be made smaller, as there won't be enough quantity to make the food processor/blender/whatever "go". I know the RP brownie recipe doesn't make a ton if you just make a single batch - 1 cup walnuts, 1 cup dates (not soaked), 1/4 cup cacao mixed in the food processor. I pulse it 25-35 times to get the right consistency of chunkiness, but I also add just a dribble of water (a tablespoon or so) to keep the cacao from flying all over my kitchen when I turn the FP on. I press it down into a small square glass dish that I have, and then cut them into 4 pieces. I can often only eat 1/2 of a piece at a time, but 1 piece would be a nice size to put on a sampler tray.

My glass dish is the square guy that came from a set of glass bowls that have the "snappy" lids - four side "wings" that snap and lock, if that makes ANY sense at all. My set came from Costco I think. I could measure it if that would be more helpful.

@ AllergyGirl- thanks for the advice about the RP brownie I'm going to make this one first. and as to the other recipes :rolleyes: I'd apparently forgot that dd and I would also like to try them. now I just feel silly :o because I was so into looking and finding recipes that would suit his tastebuds picky eater that he is I want to smack him with a wet noodle when he gets that 'I'm not touching that' snurled up nose. :D and I have the same set so no need to go to the trouble of measuring. thanks for the offer though.

LOL No worries - we've all been there. :D
I hope you like the brownies - my sweetie fell in love with them and I'm now convinced that 99% of the reason he is trying to go raw is because of the brownies and zuchetti. :P
