I'd like to make the Pesto Stuffed Mushrooms but don't have pine nuts on hand. I guess if there isn't I can go to the store.

You can eliminate them and up the walnuts, or you can use cashews, or macademias.
The pine nuts do two things, they add fat, and they add flavor, The fat you can get from the macademias, but the taste, you can't duplicate.

the pesto stuffed mushrooms are wonderful, I eat them all the time, the pesto is also excellent stuffed in small tomatoes, or squash, or just about anything, it is also good un-dehydrated too. Like on a raw cracker or on zucchini noodles. etc.

I think I did the impossible. I ate way too many pesto stuffed mushrooms. I am full now.
I was wondering about the pine nut substitution myself, however, pine nuts keep forever and I have a never ending supply so it really wasn't an issue. The only issue is a continuous supply of basil, however, I think my health food store seems adamant on keeping a good supply on hand.

I wish I could afford to use pine nuts (they are the most tasty) as frequently as I make pesto, but I substitute with pumpkin seeds or almonds. And the only thing that could beat the organic basil I buy would be to grow it myself... yum.
Having said that, this Sunday is DH's birthday and I'm using real pine nuts in the pesto I plan to make for his dinner :) :) :) (stuffing tomatoes and red peppers!)

I really enjoy walnut pesto...
BTW... pine nuts do NOT keep forever. Any nut will eventually go rancid. Store nuts and seeds in the fridge or freezer for longer shelf life.
