Hi! I have made Matthew Kenney's eggplant bacon several times as I find it is a good snack when travelling.
I was making some yesterday, and after I was done marinating the eggplant strips, I didn't want to waste the marinade so I poked around in the fridge to see what else I could marinate. I had some round slices of eggplants that I had cut up for another recipe and not used up, (they were about 1/2" thick and peeled) so I tossed them in the marinade and let them sit overnight. The next morning I dehydrated them for 4-6 hours, just enough for the top and bottom to shrivel up, and tasted them. YUM!!! The inside is soft and warm (just like cooked eggplant) and the flavors of the marinade were fantastic with the eggplant.
I prefer these round eggplant slices to the eggplant strips because the thicker rounds retain the eggplant flavor. I don't know what you would call them -- but they are so good!!! If you like the eggplant bacon, I suggest you try the eggplant rounds.
