I love salad and try to make them different to keep interest up and include many different veggies, etc...I would LOVE to see what you guys make, pics and a list of ingredients!!

Here's mine for today-
Green Leaf Lettuce, tomatoes, cucumber, avocado, grated carrot & zucchini, fresh vinaigrette & dulse....so good!!!

I just ate mine or I would have taken a picture. Mine wasn't nearly as pretty as yours though. ;)
I just had tomatoes, baby spinach, mushrooms and cucumbers. Oh and my Italian dressing I make myself. I swear it is better than the store bottle kind.

Well I don't have exact measurements, I need to start writing things down. Sorry about that. I'll try to write things down next time I make it. I also use Penzey's spices and I think it makes a huge difference. I can tell you my daughter is extremely picky and she loves this dressing.
Here are the ingredients though...I do use about 1 part olive oil to 3 parts vinegar and I use the coconut vinegar which I prefer to the apple cider vinegar for the dressing. I ran out of the coconut vinegar though and the other works fine. I also put in about half as much thyme as oregano.
Vinegar
Olive Oil <----My favorite is Middle Earth
Garlic Powder
Onion Powder
Thyme
Oregano
Penzey's Bell Pepper Flakes
Salt

My current fav. is the kale/avocado salad but I add and change a few things.
Kale, washed and cut fairly fine (remove spines) - massage with sea salt til wilted and reduced by half. Rinse and spin dry.
Massage in 1 avocado.
Add chopped tomato, chopped red onion, raisins, sun seeds, sprinkle with sea salt and ground pepper.
Top with Alyssa's Orange Dressing.
TO DIE FOR!!

No pics but....one of my latest favourites is:
Shredded Kale
fresh corn off the cob
tomatoes
cucumber
sprouted lentils or mung beans
+ my usual flax oil/balsamic vinegar dressing
Yummy!

Dinner! A nice spring mix with tomato, avocado, red bell pepper, and pumpkin seeds. I took the italian dressing idea that valkyrie posted, and made one - we'll see how it turns out. It's awfully vinegary I think, but maybe some time in the fridge mellowed it a bit.

Tomato and Avocado Salad recipe - 125 calories
Ingredients:
2 medium tomatoes, chopped
1 avocado, chopped
1 tablespoon olive oil
1/4 cup diced red onion
1 teaspoon lemon juice
1 tablespoon balsamic vinegar
salt and freshly ground black pepper, to taste
Preparation:
1. Combine all the ingredients in a small bowl and toss together.
2. Let stand for about 5-10 minutes before serving.

My favourite salad at the moment is some type of lettuce with fresh corn off the cob, avocado, tomato and cucumber all smothered in my garlic herb dressing. abosolutely divine! no pic, maybe next time i make it i'll post one.

AllergryGirl if the dressing doesn't mellow out just add a little more olive oil to it to balance it out. I just taste mine as I make it to suit my tastes. I need to start writing things down but I'm always in a hurry it seems.
The Tomato and Avocado salad looks so good.

How do you make your dressing, verbena?
i'm not sure of quantities but it's as follows
2-3 garlic cloves
about 8-10 leaves of fresh basil
few sprigs of fresh parsley
few leaves of fresh oregano
small bunch of fresh chives
good pinch of salt
olive oil
(you could sub for dried herbs I should think)
I smoosh up the garlic with the salt in a big pestle and mortar then poor the oil in and mix it round so it incorporates with the garlic. I probably use about 1/3 to half a cup of oil (it makes quite a lot of dressing as i love BIG salads).
I then chop up the herbs then add to the oil and give it a bashing and mix so the flavours come out.
hey presto!
I adore it, it takes like herb butter to me:D

Today's salad was simple because tomorrow is market day and I didn't have anything in the fridge except leaf lettuce and zucchini. What made it SPECIAL was the dressing. Pesto-Avocado. I had about 1/2 cup of leftover pesto in the fridge (very similiar to Alissa's pesto recipe for stuffing mushrooms, only I used hemp seeds instead of pine nuts, and used half basil/half parsley). Anyway, I blended the leftover pesto with a splash of olive oil and ACV, a spoonful of agave, and half an avocado. Super YUMMY!

My favorite right now is a chopped salad of broccoli. beets, and carrots. Just put all in the food processor and mix together. Great with some ground flax seed and fresh ginger and an italian dressing.

Slaw style salad of Chinese cabbage, red cabbage, carrot, zucchini, cucumber, and red onion. A light dressing made of olive oil, ACV, honey, ginger, garlic, and mustard powder. It made so much I've been eating it for 3 days. Much easier chewing after marinating that long. :p

Sorry the picture is so small, I still only have a camera on my phone, lol. This was really great, the chocolate bites are an adaptation of rp brownies, replacing dates with raisins and using fewer nuts overall (I used almonds this time, as that's all I have). I don't use dressing on anything, but if you need one I'd imagine you could drizzle some honey (or even chocolate syrup) over this.

I've never been fond of olives in general, but my local Whole Foods has raw ones and they look like normal olives (under my uninterested inspection, that is... :o).

Found this on you tube...although I did massage the kale w/olive oil & salt first.softens it was better.this is incredible.

Kale, olive oil, sea salt, avocado, almond butter, ginger, garlic, coconut amminos,jalapeno, maple (use sweetener of choice) cabbage, carrot & tomatoes..
I think that's it!:D....oh and black & white sesame seeds.

I thought I would share the super yummy salad I just ate with everyone. I guess it is inspired by a SAD taco salad...kind of....it would have been better maybe with some raw cheese or chips but I'm lacking that sort of time of late and this was really good without any extras. Some jicama would have been awesome though. It really had the taste of a SAD taco salad without all the dreck a SAD taco salad would have.
It has:
A BEAUTIFUL heirloom tomato I bought yesterday
Buttercrunch lettuce
Avocado-lime dressing (I guess that is what I would call it)
A dollop of raw chili

napa cabbage and whatever other greens

cilantro
i make a dressing of nama shoyu or braggs with garlic, agave or honey, ginger, sesame oil(not raw), and sometimes some orange juice.
thats the base- i mix it up depending on whats in season, but i just love the banana-cilantro-cabbage combo.
if anyone has any suggestions for a topping i would love that. something similar to Chinese fried noodles is delish on top but I haven't found a good raw sub for them. :D

Im really into guacamole right now ,so Ive been chopping ,my kale and sprouts up fine and adding mushrooms,green onions then dropping a big scoop pf guac in da middle and mixing it together ..........

Had this very interesting salad the past couple of days and thought I'd share.
I call it "Kimchi burger salad"! :p
I had made a batch of jalapeno burgers (my fav!) and wanted an easy way to eat them at work. I usually just top with tomato and wrap in a lettuce leaf. So I started with a bed of romaine and tomato, crumbled one of the jalapeno burger patties on top, and then just before eating, added a few forkfuls of Alissa's kimchi to give it some wetness. Really yummy! :D
I guess this would pretty much work w/any pate, and the kimchi makes a flavorful "dressing".
