Question--- what do I store the food in?? I'm new at this.
It depends on what you're dehydrating. What are you planning to d.? *Ü*

I plan on dehydrating peaches
If I was dehydrating peaches - I would store them in (choice #1) glass mason jars in the fridge. If there's any question if you've dehydrated them long enough, or you're unsure - I would then store them in the fridge (or freezer).
I've successfully stored deh. apple rings, pear rings, tomatoes and store them in plastic ziploc bags and mason jars on basement shelves. But - for other fruits I've deh'd, I was iffy and put them in the fridge (in Food Saver bags cuz they take up less room than glass jars).
I know - that's a lot of answers!
I order deh'd apricots from Azure Standard (and figs, dates) and I store those all in my basement fridge in plastic bags (figs are in a box - that's how they're packaged). *Ü*
