View Full Version : Fantastic Fall Favorites

Rawkinlocs' bumping up of the chili recipe thread gave me this idea.
Why not devote a thread to fall recipes? It could include those that use seasonal fruit and veggies (apples, pumpkins, pears, squash, etc.), as well as raw variations of classic holiday favorites (cranberry sauce, mashed potatoes, casseroles, cider, pies, Halloween candy and treats, etc.).
I know there are a lot of these types of recipes on this board, but I thought perhaps having them all in one thread would be a godsend when searching for Halloween party food, Thanksgiving food or other fall celebrations. Plus, the upcoming cooler months (I say this while it is still 85 in AL) demand some heartier, warmer foods (soups, stews, teas, etc.).
Since I don't have any original recipes of my own, I'll let someone else start it off! :D

Taht's a great idea. The only thing I can think of off the top of my head is mashed "potatoes" by heating up cauliflower (not above 105) to soften it a little bit. Put it in the blender with some olive oil, water, sea salt, pepper, and wahtever other spices you want. Blend it all up and enjoy.

A simple apple pie:
Grind up some almonds and dates (about a cup each) in food processor.
Press into pan (you can pre-season with coconut oil for non-stick)
Chop or slice up 2 apples. Squirt with lemon juice or a few sprinkles of vitamin C crystals so they don't turn brown.
Eat as is or glaze with agave nectar/orange juice/cinnamon mixture.
Caramel apples:
We had this demo'd at our group last year, it is very simple.
Process 1-2 cups of dates until it is a soft mixture.
Place each apple on a popsicle stick. Wrap the date mixture around the apple.
Eat as it or roll in chopped nuts or coconut threads.

Wow... Sharon,
Once you've dipped the apple in the soft date mixture will it set and firm up on the apple?
I know this isn't the picture thread but we JUST made these 5 minutes ago:

You guys are awesome.. What creativity we have around here!
I WILL make these for my kids this year. Kids? Me myself and my husband as well. They look SO good!
I'll see what you come up with for candy!
My daughters have been snacking on veggie candy-esque stuff from the "store", but... I'd rather they back off now. A good replacement would be wonderful.
_____________
A light, but slightly warmed soup out of the dehydrator would be wonderful.
I recently blended a few stalks of celery
a tomatillo
A green pepper
season to taste
Instead of a cold smoothy.. this would feel so good on a cold morning.

Hot damn this pumpkin pie is so amazingly good!!!
I just made the filling, then topped it with pecans that I stirred in some honey and cinnamon. It really is good. I know you can make pumpkin good by soaking it in water--but carrots are so easy!

So the nuts are not for a crust but mixed into the pie? And were you able to get the carrots smooth like the recipe says. Did you use a FP or vitamix? I'm thinking that just carrots with no liquid added are not going to get smooth. Let me know cause I LOVE LOVE LOVE pumpkin pie and would like to try it!

I'm searching for a good pumpkin pie or pumpkin cheesecake or carrot cake for this weekend.
Please keep the recipes coming! :)
I just got this recipe in my email. A different version of candy apple.
• 1 cup dates (pitted and unsoaked)
• 1/4 - 1/2 cup almond milk (or other nut milk of your choice)
• 1 teaspoon coconut oil (optional)
• 1 dash sea salt
• 1 teaspoon vanilla extract, or 1 inch vanilla bean, scraped
• 3-4 apples, depending on size
Preparation
• Mix all ingredients in a blender until smooth.
• Start with 1/4 cup almond milk and add until consistency is such that apples can be dipped and the caramel sticks.
• Insert a popsicle stick into the center top of each apple.
• Dip in caramel sauce.
• Refrigerate until caramel solidifies
I heard this combo taste like caramel.
1/2 cup medjool dates, soaked
1/2 cup brazil nuts
reserved date soak water
dash salt
STEWS mmmm :)
Here's one that I havent tried yet but after my fast I will be!!
Sweet & Spicy Thai Stew
Ingredients:
• 2 roma tomatoes
• 2 medium green zucchinis
• 2 scallions
• fresh ginger
• Thai basil
• fresh cilantro
• raw honey or raw agave nectar
• optional jalapeno or other hot pepper
• 9 large stalks celery
• dulse flakes
• bell pepper
(Note: Add ingredients in the order stated to your blender)
• 2 plum or roma tomatoes halved or quartered (use 1.5 of the tomatoes now and save the last half for the topping)
• 2 large or medium peeled green zucchini (use 1/2 of 1 in this step. Save the
remaining for a later step)
• The remaining zucchini peels
Liquefy the three ingredients above in your blender.
Next:
• 2 scallions chopped into quarters or smaller
• ½ inch piece fresh ginger (more or less to taste)
• ¼ cup fresh Thai basil
• ¼ cup fresh cilantro
• 4 or more teaspoons raw honey or raw agave nectar
• 1 Red Thai Hot Pepper more or less to taste
Blend until the above mixture liquefies.
Next:
Add 8 large stalks celery to mixture in blender (cut each stalk in quarters before adding to blender) (use less in a regular household blender -- maybe only 6 stalks) I normally add the celery in 3 batches. In other words, not all at once. Actually what I usually do is add the celery on top of the scallions, ginger, Thai basil, cilantro, honey and peppers before I blend those. Then I blend until liquefied. Then I add in some more celery and finally I add in a bit more to complete the process. Remember never to blend at a faster speed than you need to get the job done. By 14 adding in the celery more gradually, you can use a slower speed and you put much less strain on your blender's motor.
Note: for regular or low power blenders you might have to add the celery even more slowly or smaller amounts to get the job done.
Next:
Pour liquid into bowl. Chop or cube and mix in remainder green zucchini. Also mix in 6 stalks of chopped celery.
Toppings: Chop or cube remaining tomato.
Can also chop in extra sweet red, yellow or orange pepper as well as celery.
Sprinkle a handful of chopped cilantro and a handful of dulse flakes. Enjoy!

The macs are mixed into the pie filling, though I would think cashews or maybe other nut would be okay, too. I made it in my vitamix and it was very smooth. The pecans I mentioned were just pressed on top to make it purty and less like a pudding=)
