oh gosh ... do a green smoothie:
2 handfuls spinach; 1 cup water; 1 apple; 1/4 fresh pineapple; 2 frozen bananas; any other fresh fruit that suits your fancy ... blend ... yum.

My fav tomato soup
1 large tomato
some oil (up to 1/4 cup)
1 cup water
1 carrot
1 stalk celery
1 or part of a sweet red pepper
5-6 small or 3 large dates
a few fresh basil leaves
some fresh dill
a pinch of salt
1 tsp cumin
a pinch of cayenne pepper
Blend it all up ... soooo good with flax crackers and onion dip!

I make Alissa's onion dip all the time
2 cups cashews
1 cup water
1 tsp salt
blend it up put in a bowl
dice 1/2 - 1 onion.
Stir onion into cashew creme.

Marinara sauce
2 ½ cups tomatoes
12 sun dried tomatoes, soaked
some olive oil - up to 1/4 cup
4 cloves garlic
3-4 dates, pitted and soaked
A bit of Oregano and thyme and a bit of parsley, or cilantro. .
1/8 tsp cayenne
1 tsp sea salt

Place all ingredients in a food processor and blend until smooth.
I love this over zucchini or sea spaghetti, on veggie burgers, even in wraps.

Enjoy your vitamix!!!!!

I scraped up money to buy one by scrubbing toliets. Well, I was a housecleaner. One of the best investments I've ever made.

I like to soak almonds for at least 24 hours, whiz them up with soaked dates, a splash of vanilla and drink it very cold. Incredibly refreshing.
