Salads are great, yumm romaine lettuce, dried fruit of any kind for the sweet, walnuts, raw ranch dressing, what could be missing? I know croutons. Oh the crunch the, the, I just don't know. I need raw croutons. Any suggestions?

I don't know any raw crouton recipes... but you could always make raw tortillas and cut them into strips. That would be crunchy. :)

I wonder if onion bread would work? Maybe if you dehydrated it a bit longer. If not, it'd still add a yummy flavor!

I use the sunflower breadstick recipe from Rawvolution
for croutons and they work GREAT! I make the breadsticks
and then cut them into little nickel sized disks before dehydrating.
Also, kidlets love to use the breadsticks for dipping into spreads and
dressings :)

In Cafe Graditudes book they have a recipe for "Almond Toast" that makes great croutons. They taste and look just like the real deal!!

I haven't tried this, but here's a recipe I have in my files:
Fresh Herb Croutons - Diana Sobo (http://rawfoodsdiana.com/category/raw-food-recipes-2/raw-food-recipes-snacks)
Ingredients:
4 cups almond pulp
2 bunches fresh scallions
1 bunch fresh parsley
1 bunch fresh basil
1 bunch fresh cilantro
1 cup olive oil
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
Water as needed
Directions:
Place all fresh herbs and scallions in a food processor fitted with s-blade and process until finely chopped, add olive oil, salt and pepper and continue processing until mixed together Remove lid and add almond pulp. Continue processing until incorporated, add water as needed to make a batter-like consistency. When ready, remove blade and with a spatula, scrap all batter into a pastry bag fitted with large round or star tip. Prepare Excalibur trays (appx 3) with Paraflexx sheets and squeeze pastry bag onto little half inch droplets. Imagine a half size of a Hershey’s “Kiss”.
Dehydrate at 115 degrees for 24 hours. Store in Airtight container.

Totally agree!! I made the pumpernickel ones recently and they are awesome as croutons!

I sprinkle raw pumpkin seeds (I use Bob's Red Mill brand) on top of my salads, and it adds the crunchiness of a crouton as well as a nice flavor.

I've used flax crackers crumbled up a bit to add a bit of crunch to my salads. Also good are kale chips (I made a batch of goddess kale chips and didn't care for them on their own, but they were great in salad), and dehydrated sunflower seed sprouts.
