I made a dish last night with some purple cauliflower in it. I did not take a pic, so I made up a small batch of the cauliflower today to show you the color change.
It was a splash of coconut vinegar and lemon juice that enhanced the color. I thought it was pretty. I don't know how long it would keep though. The juice color in the bowl is getting darker and darker, so the veggie is probably getting lighter and lighter in color. (the head, cut florets, soaked florets)
