I have alot of rhubarb in the yard.. it's all nice and fresh and free!!

I've read that rhubarb is acidic, but later turns to alkaline.

I like to add the rhubarb into my morning juice as it adds a little tart zing to the taste...

Anybody else use rhubarb? Is it good/bad for you?

I did a quick google. Some say it is toxic and others say the leaves are toxic but you can eat the stalk. Apparently if you do eat the stalk, it is hard to digest and should not be eaten in large quanitites. I guess..kind of the way raw sprouted beans are. Moderation. I would personally just leave it out but I'm not an expert and this only comes from info I just looked up. Sorry, I hope this helped a little. :)

Yeah, I love using rhubarb in juices and smoothies. I also sometimes cut it into small pieces, stir in some honey and cinnamon then let it sit in the fridge over night so that it turns soft. It's lovely with cashew cream.

There is quite a bit of oxalic acid in rhubarb so you might want to be careful not to use too much. But then again the taste is quite strong so it's difficult to use a lot of it.
But there are varieties with less oxalic acid in them if it makes you worried.

Stay away from the leaves though. :)

thanks folks.. that's what i think i'll do... just try a few pieces to see how it goes... might as well use it up... but in moderation

let go of your concerns and simply enjoy it! yes the leaves are toxic but the stalks sure aren't!!! i looooooooooooove rhubarb/apple/ginger blend of juice. soooo yummy!!!

if you add something sweet to it it'll but the tartness a bit. but regardless you'll get a tart juice so don't add too much to your juice. start off small and work your way up. and drink it often... its super yummy!!!
