some type of easy pate, or "burger" that I can use in lettuce wraps, that doesn't need dehydrating, and will keep in my ice cooler, while camping. Thanks.

Alissa's Mock Salmon Pate is GREAT and tastes like Tuna Salad to me. It keeps well in the cooler too.

But here it is for easy reference:

Mock Salmon Pate

A delicious pink pate with a hint of salmon flavor! I eat this all the time on top of a large salad with a vinaigrette dressing. It’s such an easy pate to prepare and oh so delicious!

* 2 cups walnuts
* 2 stalks celery
* 1 large red bell pepper
* 1 large scallion
* ½ -1 teaspoon sea salt

Combine all ingredients in a food processor and blend until smooth.

Serving suggestions: This can be served on a plate as is, over a salad, rolled up in a green leaf, or spread on crackers.

The recipes range from very quick and easy (like that one) to more involved. There is a good variety and yes, a lot of them are really quick and simple. If you go to her recipe page on her site, you'll see a few more recipes...the Date Nut Torte is to LIVE for and it's posted there and very quick and easy!

The rawviolis are also posted there and those are simple to make as well.

Check out the recipe page and try the recipes listed!

OK...I never knew those recipes were there!! I can't wait to try the Raw Ravioli, the Date Nut Torte, Mock Salmon Pate...they all sound good!! Well....BETTER THAN GOOD!
