I bought raw pumpkin seeds, actually my mom bought them for me...and they are green, is this right, or did she buy the wrong thing. Are they safe to eat without soaking? Any prep tips? I plan to take them camping this week.

The pumpkin seeds that I buy are always green. I use them with sunflower seeds, dates and coconut to make nice cookies. I soak both seeds and add them whole to the blended mix of dates and coconut and dehydrate. If I wanted to eat them on their own I would soak overnight and then dehydrate

Thanks. The cookies sound great by the way. Still waiting for that dehydrator..... :rolleyes: Maybe I'll give them a try without dehydrating them!

I eat mine straight without soaking; I am sure it is easier on digestion and all soaked, but I'm too lazy sometimes :p
Yes, mine are green. I throw them in salads or just snack on them straight when I am on the run at work or in the car. they help curb my appetite. I eat about 2 handfuls and that ties me over till I can get a meal. I usual eat 2 pieces of dried fruit with them. Easy to carry with me.

I have a question: what kind of pumpkins do the green seeds come from (and what do those pumpkins look like)?
Any pumpkin that I have ever opened had slightly larger and white seeds. Are these also ok to use?

No worries...The green seed is the inner part of the seed without the outer fiber cover that you see when you cut open the squash.

Personally, I dry out my own seeds as well whenever I can. The white part is indigestible fiber, and wont hurt you unless you have Diverticulosis or something similar.

When you cut open a pumpkin, the seeds are white because they have the shell on them. Once you crack it, revealed is the green seed meat. So if you buy them whole, they'll be beigeish (or brownish if they are roasted) or very light; if you buy them shelled, they will be green.

You can eat the seeds of any squash as well; mostly, they taste similar. Seeds of the Butternut squash and Kabocha (aka Japanese pumpkin) are just as yummy.
