Im getting married in January and my Fiancé and I are both raw. We are making all our own food (along with the help some wonderful friends) but I am looking for a really great tasting and looking raw wedding cake recipe.

Any help would be greatly appreciated! I donÂ’t mind if itÂ’s a bit labor intensive, I just want it to be good!

Hi Pattie,
You can really make any cake into a wedding cake with a great frosting.
This is what made for my wedding a year and a half ago. Everyone there loved it and half the people didnÂ’t even know it was raw!
ItÂ’s just my basic carrot cake recipe x 6 (I think I cant remember how much I increased it but it depends on how many guests you have) then I just decorated it pretty with carrot flowers! It was awesome!

Im making this for a friends party next weekend, what did you decorate it with? I canÂ’t wait to make it for her. Ive make your carrot cake before Alissa and its so simple but so great.

Alex said in his last newsletter that his next newsletter would include a "chocolate wedding cake recipe that feeds 70". Sounds good!

I've never tried Alissa's carrot cake, I guess I better get to it! It sounds delish...I adore carrot cake!

I got a raw wedding cake prep video from the Boutenko's website (rawfamily.com), but I haven't watched it yet, so I can't honestly say how it is. But I can say that the cakes that Valya and Sergei boutenko make are incredible!

There are some fantastic cake recipes in their book Eating Without Heating, including this one for wedding cake:

2 cups raw tahini
4 cups dry, shredded coconut
1/2 cup honey
1/2 tsp. salt

Mix together until desired texture. For layers, use any sliced fruit of your choice.

Frosting:

1 cup cashews
2 Tbsp. honey
1 tsp. mint extract
1/4 cup fresh coconut butter
1/2 tsp. of salt
1/2 cup water

This is delicious! My other favorite is Walnut Cream Cake, which is just walnuts, raisins and vanilla ground up together.

Do you have Alissa's book - it is there. Also here is another:

4 Cups of carrot pulp (from juicing)
1 Cup Walnuts
1 Cup fresh or desiccated coconut
Two thirds cup of dates
Half cup of raisons
Quarter cup of ground flax seed
Cinnamon & Nutmeg

Mix all the ingredients together and then pass the mixture through a juicer using a blank screen, The homogenised mixture can then be molded into shape by hand or in a cake tin.
Once this is done you are ready for the yummy topping.

A little fresh orange juice, a little grated orange rind, raw tahini and dates, blend all ingredients together to make a scrumptiously, delicious, whippy cream - decorate as desired.

With the wedding cake I didn't layer any fruits in, but I think banana would be good. For the walnut cake I've used sliced apples (mmmm) and kiwis.

Can almonds substitute for the walnuts? I love the buttery taste of an almond
