A lot of recipes I wish to make call for the use of corn, however I am severly allergic :[ does anyone know of a good substitute????

That would depend a lot on the recipe. But I suppose that sprouted wheat berries our buckwheat would work in bread-like recipes such as tortillas.
In other recipes you might want to replace it with something soft and sweet like peas for example.
I know nothing that would work as a replacement taste-wise though.
