Hey guys,

I think I haven't been on here in a couple of days. Been a crazy week this week. Have had a hard time getting back to 100%. Still trying to get there. Today I am sure I will have goji berries and a salad at a local cafe that I am going to with my sister and mom. I have so so many greens right now so I am planning a big smoothy this morning for breakfast.

Holding onto weight and also not feeling well is making it difficult for me mentally right now. I am meeting with a nutritionist on Tuesday and hopefully she will be helpful in making sure I am getting what I need raw so I don't have the problem I had last week.

Aww Kgarett I hope you feel better soon... Are you doing any super foods like wheatgrass or cacao that might instantly revive you, at least for a bit so you can feel good mentally again? Wishing you the best of luck and the best of health!!

Today's #7 for me. I woke up just a bit ago and am loving that my skin looks a bit brighter each day. Yesterday I was concerned that I ate too much... But as it turns out, I lost a pound overnight (even though I snacked on carrots and guacamole late last night). I was SO thrilled to see that I quite literally can eat to my heart's desire on this diet and not gain weight. I imagine the low salt intake is related to this, but whatever the case I'm feeling pretty optimistic that this is the path for me.

I feel an energy that I didn't feel before. Nothing crazy not like a ridiculous high (like I expected) just more like a consistent and inner reserve of energy that I can tap into at any time. Its making me feel quite strong and keeping my energy levels from dipping during the day. I feel more compelled to spend time with friends and connect with people and to be more organized, and I have to attribute that to this way of eating; since I have tendencies to isolate when I'm low on energy and can often be lazy when the energy dips during different times of day.

Anyways, looking forward to starting week 2!! I really can't wait -- and hope you all enjoy entering your week 3 (I think its your week 3 anyway...) Glad to be on this journey with such supportive and inspiring people.

and it was..

Creamy Potatosalad
Salad;
2c jicama, diced
1/2c red bellpepper, diced
1/4c celery, diced
1/4c red onion, chopped
1 TBsp fresh dill

mayo;
1/2 avocado, mashed
1 TBsp tahini
2TBsp water
1/4 tsp nama shoyu, although I used Braggs amino acids
1/4 tspagave nectar
salt and chilipepper to taste

Mix all the salad ingredients in a bowl.
Mash all the "mayo" ingredients together ( I put mine through the small FP) pour/dump ontop of salad mixture., blend well until all is covered and enjoy.

I've attempted the monthly challenge at least 3 times, maybe 4, and this is the best I've done. My fridge is spilling out fresh, fresh, fresh....

Yep, I've slipped, but yowser, I can't believe how close to 100% I've come!

Fresh carrot juice this AM, hiked *2* of the falls in Ithaca today (attn fellow NY'ers, ahem), we hiked 2 1/2 hours, took along water but nothing else (only my 3rd date with this awesome man/huge meat eater). Next time I will suggest a picnic, we've now had time to discuss "food". Kind of exciting, in a lot of ways ;-)
