I'm getting my organic food delivery tomorrow, and this time it contains egg plant. Any ideas how to use it without dehydrating?

OOOHHH, that's a good question... I don't think I would like the taste of it without dehydrating...may be a bit bitter and would probably turn brown on ya.... I'm interested in responses for this, though...

There is one in Juliano's cookbook!
I think the eggplant is salted and sweated and then packed in olive oil to soften. I made it a few time LONG ago and remember that it was good!
Made a great pizza topping :)

I am pretty sure it was on this forum, but someone said to cut the eggplant in half, salt it, put them flesh side down on a rack so the bitter juice could drain and then slice into noodles and eat instead of zucchini (or other veggie) noodles.
I haven't tried this yet, but I am going too! Ü

I like to chop up the eggplant, skin and all, then mash it in a sirubachi and add it to chopped tomatoes, chopped peeled cucumber, chopped bell pepper, diced garlic, a small amount of chopped avocado, a sprinkle of paprika and cayenne, and a squeeze of lemon juice.
