View Full Version : Chocolate Mousse ?

I have a bag of Navitas Raw Chocolate that is not emptying very quickly. Fact is..my recipe is pretty dull...a tsp of raw chocolate powder dissolved into a bit of almond milk with about 50 drops of liquid stevia. There must be a better way.

What about making a mousse ? With chia seeds or something ?

This somehow reminds me of the first time I made raw cookies for the kids. I don't use a dehydrater so the kids complained ...." dad, since when do you have to eat cookies with a spoon ? " . Healthy though.

I can go through a bag of cacao pretty quickly. Not sure which recipes to recommend to you. Do you use other sweeteners besides stevia? Are you opposed to raw agave or maple syrup? You don't use a dehydrator.... do you have one you could use? :)

As for dressing up your blender drink, I would toss in more cacao, a few dates, vanilla, then blend in ice until it is thick like a milkshake. If you don't have any almond milk ready, try it with a handful of cashews and a cup of water. Swirl it with a syrup made from agave and cacao. (See "Ginger's Best Coffee".)

I use stevia mainly. I always have maple syrup ready too. Its not raw..but they make it down the road and I get the darker mineral rich type which I use with lemon juice for fasting.
The idea of blending cacao with a few dates sounds great ! Yes, vanilla helps too.

I don't own a dehydrator. I'm mainly a smoothie and raw juice person. So I use blenders (blenders= hand-held, "magic bullet" and a larger one) and a juicer.

I am going to try the cashews with water idea. Sounds good ! Thank you !

One of the most popular recipes:
Rawpriestess Brownies
1 cup Dates (pitted)
¼ cup Cacao powder (can mix w/carob)
Bit of Water (more if don't have vitamix or blendtec)
Optional: 1 cup walnuts
Blend until holds together & press into a pan. Cut & refrigerate or freeze.

Chocolate Pudding 2
1-2 Avocados, blend 1st w/water
½ -¾ cup Agave or dates
¼ cup Carob or Cacao Powder
1 Tsp Vanilla
Dash Cinnamon
1 cup Water

They all sound great Dimond ! I am very drawn to the pudding with banana since banana is a staple for me. I am going to get some agave right now to try a couple of recipes.

A thought: I go thru a jar of raw honey every now and then.. What about honey and raw cacao....that work ?

I personally can't make honey work as it seems to overpower the flavor of everything. Same with stevia, though honey is way better. However if you can make it work, that's all that matters. You can always just use more banana instead. I've mixed just cacao with banana and nothing else and it works great. Even better if you freeze it for 20 minutes or longer. I like very simple recipes with 2-4 ingredients whenever possible.

I like the simplicity of cacao and banana.
I like to eat banana slices rolled in kale or spinach leaves. Kale/banana wraps I guess you might call them.
Building on your idea, I might try some spirulina powder blended into banana.

I use up a lot of cacao powder with this chocolate macaroon recipe. Extremely easy to do. Your kids could help. :)

1 1/2 cups dried shredded coconut
3/4 cup cacao powder
1/2 cup maple syrup
3 Tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon pink crystal salt (or finely ground sea salt)

Put all ingredients except melted coconut oil, in a large bowl. Using a big spoon, stir ingredients together. Pour in the melted coconut oil and stir until well combined. Scoop out by the Tablespoon and shape into balls. I dehydrate them until the outside dries, but the inside is still soft and moist.

Since you are not using a dehydrator, roll the cookie balls in additional dried coconut or cacao powder. Put in fridge to firm up.

Maybe you should try a test... put a few cookies in the fridge to see how well they harden. If the cookies are still too soft and gooey after about 30-45 minutes in the fridge, add another Tablespoon or two of melted coconut oil to the rest of the cookie dough.

Store in an airtight container in the fridge. Shelf life is a lot longer than these cookies will be around.

Unless your kids have a problem with coconut, they are going to love these cookies. :)

I like the chocolate mousse recipes from Alissas book- Soaked dates, fresh avocado, almond butter, almond milk and cacao. It's delish x 10. I like to make a little pie crust with nuts/dates and top it with shredded coconuts...

I have the same exact brand and I love to make my own raw chocolate bars with it. It is so yummy!!! all you need is the following:

5 Tbsp. of Raw cacao
5 Tbsp. of extra virgin coconut oil
1 Tbsp. of agave or you can use stevia(I tend to do a mix of both so I don't over do it with the agave)
a pinch of sea salt

you can add other optional stuff to it like vanilla, nuts, shredded coconut. Then mix it all together well and either put it in a mold or as I do(which is the "creative" way.....LOL) I have a container lid that works perfectly to spread it out on. Stick it in the freezer for a few minutes. Then take it out and score it and put it back for a bit. When your done you have yummy and healthy chocolate bliss:p It usually makes five bars

Avocado. Nothing is creamier than avocado.

Raw Fudge

1 ripe avocado
1/2 cup butter (I use applesauce)
1 teaspoon vanilla extract
1 cup cocoa or carob powder
1 cup turbinado sugar
1 cup date sugar
(I cut out the sugar entirely and sweeten with agave)

Even my SAD, junk food addict roommates love this recipe - without my modifications, that is. :) Just blend it all up, and be sure there aren't chunks left from the avocado.

I've used almonds or walnuts. I think any nut would work okay. I use the vitamix to combine, but a FP would work, to..
