View Full Version : I want to make some ice cream!

I've made raw ice cream in the past using some recipes I have. I recently went to whole foods and they sell, although not raw, ice cream made with coconut milk! I wanted to make my own raw version with raw coconut milk. I know this might be a stupid question but how can I make raw coconut milk? Another question is after making the raw coconut milk, any ideas on how I would use that in an ice cream recipe?

Easy! I use equal parts Coconut Water and Coconut Meat (from a Young coconut) and blend in VitaMix -- that's it!

I usually open an entire case of coconuts at once, so whatever water I don't plan to drink and meat I don't plan to use right away I mix together and freeze in small containers to use later.

Will post some ice cream recipes in another message.

For this recipe, you do not actually have to make the coconut milk - just use the water and meat:

This is my absolute fav – from Matthew Kenney Everyday Raw:

Cherry Chip Ice Cream

1 cup cashews, soaked 1 to 2 hours
1/2 cup young coconut meat
1/2 cup agave (or Date Paste if you are opposed to Agave)
1-1/4 cups Coconut Water
1/4 vanilla bean (I use the entire bean)
Pinch sea salt
1/2 cup coconut oil
1/2 cup plus 2 Tbs frozen cherries, thawed and chopped (Note: I use fresh when available and dried cherries at other times. I have not tried frozen.)
1/2 cup “Chocolate Pieces” – this is another recipe -- I just use cacao nibs – I have even forgotten to put them in, and it’s fine without.

Blend all ingredients EXCEPT 2 Tbs cherries and Cacao Nibs in Vita-Mix until very smooth. Stir in reserved cherries and cacao nibs. Pour into Ice Cream Maker and follow manufacturer instructions. Yield 1 quart.

I still haven't made ice cream yet - but lookin' at that Cherry Chip recipe posted by revdrcyn makes me wonder what I'm waiting for!! *Ü*

Mine's really easy - just 3-4 frozen bananas, 3 squirts of vanilla extract, a big handful of berries(blackberries, blueberries, strawberries all work great), 1/4 cup raw cashews, 1/2 cup unsweetened coconut shreds, a bit of juiced orange and a tiny bit of good salt(this brings out sweet flavors. Whip it all up in high-speed blender and you've got amazing soft-serve. If it's a little too soft, put it in little bowls in the freezer for a little bit to firm it up. A handy tip about the cashews and coconut - I blend these up first into a powder, then add to the fruits. This is basically a lower-fat variant of raw ice-cream recipes due to the smaller proportion of cashews and coconut This basic template can be varied a bunch of ways:
raw cacao-cherry
mango-lime
pineapple
pineapple-mango and so on.
Feel free to experiment! One combo that's been awesome lately is putting honey tangerines in - they've been in season but won't be much longer.
