My Open House menu was a hit!

Just had a FANTASTIC Open House for my new space where I will finally be able to have raw classes!

Menu:

Kale Chips
Tacos (Purple Cabbage Leaves, Nutmeat, Salsa)
Spanish Rice (Cauliflower & Salsa)
Eggplant Tenderloin Tips (Eggplant marinated in spices, evoo, dried seeds then dehydrated)
Guac
Salsa
Dr. Cow's Vegan cheese & Flax crackers
Chocolate-Covered Strawberry Pie
Strawberry Cheesecake
Tropical-Coco Fruit Punch

The Tacos and Tenderloin Tips were the biggest hits! We had about 100 people and all were amazed at how good raw can taste.... :) yay!

I just wing it....never use or stick to a recipe...

I actually started out with a very different plan for the eggplant, but as I got into the process, they started looking really "meaty", so I cut the 1" slices into quarters, added some extra olive oil, and dehydrated longer and they came out somewhat like the texture of chunks of portobellos.

The eggplant marinade was dehydrated sesame seeds, fresh marjoram, fresh thyme, dried onions, dried & ground habanero, maca, nama shoyu, olive oil, braggs vinegar, and sea salt/cracked pepper.

The tacos were just purple cabbage leaves, filled with a basic nutmeat (walnut/sunflower seeds/spices) and topped with a spicy fresh salsa.

So simple! I booked two classes and was asked to cater two events just from this party. So yay for raw!

Congratulations! Very inspiring. There are 100 happier people in the world and maybe a handfull or more who might just jump on the raw lifestyle train.
