In need of a dressing recipe

Hi everyone! I'm looking for a salad dressing recipe that would be good with a mexican/type salad. Something that would go good with avocados, corn, tomoatoes, red onion, cilantro, etc. Any ideas? I've been experimenting but can't seem to come up with anything that makes me want to have it again. I do have plenty of spices. I wouldn't mind a raw version of Chipotle's salad dressing. :D Any ideas would greatly be appreciated!

Chipotle-Lime Vinaigrette Dressing
1/2 cup olive oil
1/4 cup fresh lime juice
1 teaspoon minced garlic
1 tablespoon minced chipotle peppers in marinade (see below)
1/4 cup chopped fresh cilantro
2 teaspoons ground cumin
Dash Salt
Dash Black pepper
Marinade (choose any combo): chile peppers, garlic, vinegar, tomatoes, onions, herbs, spices

Or some type of pesto-type dressing may be good.

Dimond, I tried your dressing first and made some minor changes by adding some raw honey to balance out the tart flavor of the lime and then added some more garlic. It turned out awesome!! I had it with romaine, corn, red onion, cherry tomatoes and I did put some black beans on it too.

DebB, I'll be making your suggestion tomorrow so I'll let you know how it is!

If I was eating this I would splash some apple cider vinegar on it, and that would be my dressing. I love that stuff!

I like this recipe to dip my veggies in:

I use one of the ranch dressing recipes that I got off this board, don't have it on hand to pass along right now, and I add crushed chipotle to it, with a little chili powder!
