A friend, who knows I like raw produce, gave me a beet. I have never consumed a raw beet before. It's starting to get soft. Any ideas?

Soft? A beet getting soft? I've never had that experience.
I'd throw it in a juicer with carrots and beet top or another green.
Shred it and add to cole slaw.
Slice and marinate then add to anything else you're eating.

Coleslaw! Excellent suggestion, Revvell, as I was just given a head and a half of cabbage a little bit ago, and some carrots. Perfect! Thanks!

Yeah, the do get soft.
I love beets and carrots grated on top of a salad with some bragg's, lemon juice and olive oil.
Also good in juice - carrot, apple, parsley, ginger, beet is divine. Only like a quarter of the beet though with a couple carrots, a small piece (1/2 inch?) of ginger, an apple, and a handful of parsley.

Don't juice the beet by itself, though. I had a bad experience with that!He he he, I thought.. it's just one beet.. what's the harm? Little did I know. :o It's great if you juice it with other fruits and vegetables like the other posters already mentioned here, though!

Uh oh!! I did beets and some mixed melons the other day. Not bad after I added ice.
