Honey-Nut Cereal

2 1/2 C whole buckwheat groats (unroasted)

Honey-Nut sauce

4 tbsp raw almond butter (I used raw cashew and peanut butter as that is what I had on hand)
6 tbsp raw honey
1 C orange juice
1 tbsp cinnamon
1 tsp nutmeg
1/2 tsp sea salt

Soak the buckwheats in 6 cups water overnight. Drain and rinse in a colander or strainer until the rinse water runs clear. Allow the buckwheat to stand for 10 min to drain well.

To make the honey-nut sauce: Mix almond butter, orange juice, cinnamon, nutmeg, and sea salt in a bowl. Place the drained buckwheat in a generously sized bowl. Pour honey-nut sauce over the buckwheat and fold with clean, wet hands or a large spoon until well coated. Spread the buckwheat mixture into a thin layer on nonstick sheets on dehydrator tray. Dehydrate at 108 for 12-20 hours or until dry. After 12 hours, remove the buckwheat formt eh sheets and return to the dehydrator for 2 hours or until very dry.

Ok, see I knew there was a reason I was called to take my camera out this morning and take these pictures of our raw breakfast cereal!

It's just some fruit, we used blueberries, strawberries and bananas with crushed almonds swim'in in almond milk.

Quick and easy!

I'm trying to get the photo up, but having trouble  , I'll try later. I've got some kiddies I need to tend to right now.

oooh my favourite would be simply to sprout buckwheats, dehydrate them till crunchy then have it mixed with raisins and almond milk!!! :D of course you can add what ever you fancy, bananas, strawberries, grinded almonds, sunflower seeds.... you know, the works, have fun! ;)

truthseeker, I like that recipe. I can make it on the spot with no dehydrator. Can you tell me how you crush the almonds. I use an S blade on my food processor and it is either two chunky or crushed to fine. I have a hard time getting them just crushed.

Does anyone know of a device to make slivered almonds?

Ok, real primal approach here, ha, ha :p

I take one of my custard cups (a small bowl of any kind will work), put the nuts in it, then I use the ...pusher, hopper, stick thingie that came with my green star juicer (to push the produce through it) and I lean on it and crush'em into smaller bits. I use this same technique to crush berries to make our "jam" for PB & J sandwiches.

Pecans really crumble very well right from your finger tips into the bowl.

I also sometimes use my mortar and pestle but the nuts tend to slip around the bowl more with both of my crushing tools being round. That's why I like the custard cup it's flat at the bottom. And my hopper from my juicer is also flat at it's end.

Glad you like it's simplicity. :)

I don't know if you'd call this "cereal", but when I'm feeling particularly lazy, I cut up a banana, throw in a few cut up dates, a small handful of raisins, a handful of whatever nut I have around, and maybe some shredded coconut in a bowl, add a couple tablespoons of either fresh O.J., apple juice, almond milk or plain ol' water just to moisten it, and eat. I have done mixes like Truthseekers' cereal as well. Nice and simple, I love it. :D

I do similar "cereal" to Autumn's where I'll dice apples, slice bananas and put in a bowl with a spoonful or two of almond milk, add some water, a little agave or honey and sometimes raisins...stir and eat. I haven't done oj, though that sounds good too!

Truthseeker.....I LOVE YOUR APPROACH! I was going to say (for the crushed almonds) put them in a ziploc baggie and bash 'em with a rolling pin or even a hammer? Of course you could see by the ? I haven't tried it yet

To make the almonds crushed at the right consistency, this is what I did.

I put them in a ziploc bag. I then took a thick bottomed glass and just gave each almond a tap that split them, crushed them, etc. into the correct format I was looking for.

Also, I tried the strawberry, banana, blueberry, almond cereal and it was not bad. I am sure it is a very healthy cereal, no doubt. However, I have to come up with some type of flake similar to SAD cereal in order to really feel I am eating cereal. Also, some raw granola might work to. It just needs a little "something, something" to get it going you know.

In Carol Alt's book, there's a simple recipe. Just take raw oats and soak them in almond milk. Add your favorite sweetner. I've also seen a recipe for oats soaked in OJ. Add sweetner, bananas, coconut, etc.

I find that oats satisfy by desire for cereal very well.
