What is your favorite gadget? The one you use for almost a lot, or one that's perfect for what you need to do...etc.
I love my onion cutter (http://www.amazon.com/Progressive-GOC-300-International-Onion-Chopper/dp/B000A389IM/ref=pd_sim_k_3)!! I use it for more than onions--bell peppers, tomatoes, jalapenos, radish, carrots, endless possibilities :)
Also:
I adore my salad spinner (http://www.amazon.com/Progressive-International-SALL-6-Salad-Spinner/dp/B001GAQKMU/ref=sr_1_3?ie=UTF8&s=home-garden&qid=1271201303&sr=1-3). So useful when washing and storing herbs, making kale chips, drying other produce quickly
And I love rubber spatulas :D
What are your favorites and must-haves?

Vita...is that a gadget? nawwwww
Um I love the spirooli I use at my friends house...I want one soon.
I guess I would also say my glass mason jars... I use them for everything.
My wooden spoons as well as my cutting block and knives!

I love the new lemon, red pepper, and onion savers I bought for $5 each. They are plastic and look like what you will store in them. They are cut in half and have a slight screw to them to seal them. I had a cut red pepper in one just recently for over a week and it did not get slimy. And I put lemon in my tea and the keeper saves plastic baggies.

This is right up my alley! I *love*love* kitchen gadgets!
One of my favorite items is my V-slicer (http://www.qvc.com/qic/qvcapp.aspx/view.2/app.detail/params.item.K5662.desc.Fuller-Kitchen-Solutions-VBlade-Mandoline-Slicing-Kit). I don't use it daily, but when I do - it makes things so much easier!
Oooh - I see where QVC is offering free s&h this Thursday only.
I also got my Spirooli at QVC (http://www.qvc.com/qic/qvcapp.aspx/view.2/app.detail/params.item.K7702.desc.Fuller-Kitchen-Solutions-Manual-Vegetable-Curler-Slicer) too - I have never seen a cheaper price. Coupled with Thursday's free s&h . . . (wow) $18.48! (well, plus tax if applicable).
I've got a lot more favorite gadgets, but I'll hold back (for now...)
JennaHoneyBear - can you tell me more about the onion cutter? Do you put say, 1/2 an onion and just close the lid and it dices it? I searched YouTube to see if there was a demo, but I didn't find one. *Ü*
Back to say I found this video (http://www.youtube.com/watch?v=SX9QZXyNYJk&feature=related) - do you have the smaller dicing blade too?

I gotta love my apple slicer. It's nice and easy for lazies like me, who won't even take time to core their apples. ;)

...and I'm also a fan on the Spirooli. :)

Ooh, speaking of mason jars, the zipvac vacuum sealer and jar attachment, yep that's the money and antioxidant saver.

I'd have to say my knifes. But perhaps that's not a gadget?
The apple slicer is probably my most used gadget since I eat lots of apples.
Well I probably use the salad spinner even more, but I don't like it. It's a cheap one from IKEA. I need to get a better one.

I love my Ninja. I got it from QVC and it has a smaller size jar that I use instead of my food processor for smaller recipes. I cut most of Alissa's recipes in half, and then sometimes there isn't enough volume for the food processor to combine it.

Oh wow, that video makes this gadget look awesome! haha
I wouldn't put a whole onion in there, I cut it up into chunks. Maybe I just get big onions, but a whole onion wouldn't even fit on the blade. I just have one dicing blade for it :) man, the lady in the video must be a man or a beefcake because it's not that easy to close the lid to chop!! It's still easier than knifing it, but sometimes I have to use my body weight if I'm chopping a tomato! haha! how do they make it look so easy in the video??

Haha - good one!
WhooHoo - I bought a sweet little 4 tray Excalibur dehydrator, in the box, big roll of parchment paper, instruction book and a nice hard cover book on preserving - at Goodwill today for $10.50!
Even though I have a 9 tray Excalibur, I wasn't going to pass it up. I love thrifting. *Ü*

Pampered Chef has a new (to me) peeler...the julienne peeler! This is a HUGE time saver when I want to make raw veggie sushi, or julienned veggies for a salad, raw soup, chili, etc. It works wonderfully and saves time in the kitchen...A huge plus these days for me! I can't remember the cost but it seemed well worth the money for the time saved.
They also have a wonderful corn cutter! This saves a ton of time in the kitchen as well! The side of the device has sharp edges that allow you to make cuts in the husk right down to the corn kernals. You make four slits around the cob, and the husk peels right off. No more peeling layer after layer after layer. Then you stand the cob up on a dish and run the corn sutter down the cob. From start to finish you can shuck & cut corn off the cob in under a minute. It's wonderful!

Hi Kelley ~ Thanks for the heads up on the corn cutter (http://www.pamperedchef.com/ordering/prod_details.tpc?prodId=26434&words=corn%20cutter)tool! I never knew about that one. I know what I'll order next PC party! *Ü*

LOVE kitchen gadgets! Aside from the OBV Vita/Excal/Brev...I have a large selection of every size imaginable of glass mason jars, although the quart size is the gs jar.
I am also shocked at how much I use my As Seen On TV Onion Chopper - I dice EVERYTHING I can in this little gem (even though I have an excessive amount of seven chefs knives, all different brands. I'm a gal who like options.) ;)
Ceramic peeler and the KAFP gets used just about every day, too. Spirooli, too. And squeeze bottles to decorate stuff.
Oh, and my favorite "big salad" bowl. It's my comfort food mixing-size bowl for when I just want a big bowl of greens to munch on.

Definitely my Wusthof knives - I couldn't do with them. And my bamboo cutting boards. Also just bought a rubber tree cutting board - apparently they are supposed to be easier on knives. I really want to buy a good ceramic knife as well. Any recommendations?

Not sure it qualifies as a gadget since it is electric. I have to say my Magic Bullet. I use it frequently for making single servings of salad dressing, AND I just discovered the flat blade turns 1/4 cup of nuts into nut butter in 15 seconds!

We use our Magic Bullet all the time. It's great for grinding up Flaxseed, Sunflower seeds, etc, and, like you say, for salad dressings.

Jenna,
I saw your post and immediately ordered the onion gadget - used it yesterday and it is fab!
My favorites are my Mango Splitter and Pineapple Slicer - could not live without these - see images below!
