This was inspired by a Hallelujah Acres recipe. The picture isn't as vibrant as when I first tossed it together as the avo started to darken. I've had this the past 2 nights for dinner. So crunchy - and those little carrot dices in there are very tasty!

Deb's Diced Salad

Dice:
2 cups carrots
2 small cucumbers
2 stalks celery
1 medium red bell pepper
6-8 small tomatoes (to taste)
1/2 sweet onion
1/2 - 1 avocado
1/4 cup fresh cilantro (or parsley)

Toss together and add to taste:
1-2 teaspoons kelp (can omit - but you don't taste it in there)
1/2 teaspoon salt
2 tablespoons lemon juice
1-2 teaspoons ground cumin

Toss again and enjoy! You could omit the avocado and add in a bit of olive oil instead. *Ü*

Hello Debby,

I dice a lot of salads (cucumber, Tomato, Kale, carrots, Herbs, Apple ...or fruit salats) together in the Food Processor. It tasts so much better than made by hand, seems that all the different tastes of the food combine more, that way. The most important thing is to put in something juicy like tomatoe or cucumber.

My non-raw friens love these salads. One friend even bought a FP to make those salads, too. When she invited me next time she offered me a salad made of beet, carrot and onion - I thought it woud taste horrible:eek: - and it was so jummy.

In summer when it is hot, I love to prepare a salad in the FP. Then I add tomatoe juice and - voilá - I have a tomatoe vegetable soup.

I'm with you Katharina ~ I could eat these kinds of salads every single day and not tire of them! Aren't they good?

It sure would be fast in the food processor :) Some times I like to chop by hand - it's almost like a mediation for me.

I'd love to see your salad recipes too! I love lettuce salads, but non-lettuce salads are my favorite.

I see you're from Germany. We had an exchange student with us for a year and he was from Grube, outside of Lubeck on the northern coast. *Ü*

Hello Debby,

ultimately I started writing down the recipes I do. I am a very creative person, but often I did combinations only one time, because I forget what i put in and won´r repeat it.

So now I try to write the special recipies down.

Oooo DebB! That looks fabulous!

For awhile there I was addicted sunflower greens, avo, tom, pressed garlic and lemon juice salads. I agree, the chopping is sort of zen for me and I enjoy cutting each veg a little differently for a nice presentation and texture. Chopped salads are so delish!

Now that's a great idea - I've got a tray of sunnies going and I'll add some in when they're ready!

This tastes good just with the lemon juice and not fat too if someone wants a lighter meal. *Ü*
