Why do nuts need to be soaked?

Soaking nuts removes the enzyme inhibators. You want to make sure that you soak the ones with dark skins on them.

Uhm, I think this should be in Raw Recipes and Raw Food Preparation, unless you're talking about raw foodists acting "nutty", in which case you should grab your garden hose and "hose 'em down":eek:
If you're referring to cashews, macadamias, sunflower seeds, etc. then it makes them more pliable during food preparation, blending, etc. In the case of say, almonds, hazelnuts then it would to be to also remove the skins as these contain enzyme inhibitors. However there also benefit to leaving the skins on as these are a source of many newly discovered antioxidant flavonoids.
