Raw Lemon Gelato?

My Sister wants me to make her Gelato for her birthday, few months away, but is there a way to make Lemon/Raspberry Gelato??

Here's what I would do.....

Young coconut (meat & water)
Cashews
Vanilla extract, bean, or powder
Ice cubes made from juiced lemons & raspberries
(or frozen raspberries and fresh squeezed lemon)
Maple Syrup

Vitamix - then process it in an ice cream maker (this is key!!) You can also toss some frozen raspberries in at the ice cream maker stage if you want a chunky gelato

save some grated lemon peel and a sprig of mint to garnish

sorry - no proportions are given because i just guess/taste/adjust as i go.....
