In honor of autumn's approach, I bought a small pumpkin....
Does anyone have a simple recipe that would include a pumpkin?

I'm sorry I don't have a recipe, but I was hoping someone else would come along....Thanksgiving is just around the corner. ;)

Hi, Mysticat!

I just love pumpkins! Their hues are my favorite too; I love Autumnal colors. I love eating them, growing them, and just having a bunch around the house :)

I haven't done too much raw with pumpkin, though I have made many pumpkin smoothies! I just add nuts/seeds, bananas, coconut, nutmeg, brandy/apples/pears/quince, etc.

Here is my favorite all-time vegan "eggnog"; it's better than real eggnog:

Vegan "Egg Nog," by Cherie Soria, author of Angel Foods http://www.rawfoodchef.com/

Servings: 2
1 cup almond milk, organic soy milk, or rice milk
1/3 cup raw macadamia nuts, soaked overnight
3 honey dates, pitted
1 teaspoon vanilla extract
1 teaspoon maple syrup (or raw agave {dark or light: http://www.rawfood.com/cgi-bin/orde...c_Food&sc=Agave} OR raw yacon syrup [http://www.naturalzing.com/catalog/...roducts_id=319])
1 teaspoon flax oil
1/4 teaspoon ground nutmeg
1 - 1 1/2 frozen bananas

Place all ingredients in blender and puree until smooth. Serve at
once or refrigerate for up to 6 hours before serving. Serves 2.

Another idea is to substitute pumpkin in recipes calling for carrots and vice versa :).
Pumpkin pudding sounds yummy.
So, if you see a recipe for raw carrot soup, try pumpkin; or in "burger" recipes calling for carrot, use shredded pumpkin, etc.
Of course you can sub it in recipes calling for butternut squash and other seasonal gourds.

Pumpkin isn't my first choice for noodles, though some people like it.

Pumpkin shredded very thinly and tossed with other veggies -- maybe a coleslaw or in a salad.

Stuffed into sushi or ravioli; wraps; lasagna; any bread recipe; just add spices.

Mmmmmm...they all sound yummy! You gave me some real good ideas to start with.
The colors of autumn are spectacular! I feel most alive during the fall season.
