I made the fettuccine alfredo from Alissa's book and it tasted great. It is not the same taste as SAD fettuccine alfredo, however, in my opinion, in taste better. Very easy to make. I made a half serving which was a large 9 inch plate full. I added cajun seasoning (the kind with no salt added) and celtic sea salt and some fresh ground black pepper.

I wish I had made the full serving. I could have easily ate all of it.

Here is the big shocker, this dish is actually a fruitarian dish. That is right, both zucchini and squash are considered fruits as they "fall away" from the host plant without the plant being harmed.

This is good info. to know. I'm going grocery shopping tonight, and the ingredients for the fettucine alfredo are on my list. It's the first of Alissa's recipes that I'll be making. I'm very excited.

Do not try to substitute the zucchini and squash with cucumber. Cucumber gets extremely limber and waters down when sliced real thin. Keep to zucchini and squash.
