View Full Version : In search of Carrot Smoothie recipes?

Hi all. Looking for a carrot smoothie recipe that is palatable--any ideas?

I have nothing against carrots, and I eat them raw and crunchy sometimes, but I'd like to incorporate an occasional carrot smoothie into my diet several times per week.

I have a basic formula for my Green Smoothies (dark leafy greens and nearly any fruit in my Blendtec), but I'm wondering what I can/shoudl be doing for carrot smoothies? I was *thinking* about some carrots and some fruit mixed together--is that OK? I'd prefer if it tastes a little on the sweet side instead of just boring carrot 'straight-up'. (I do NOT have a juicer, nor do I plan on buying one (I live in an apt. in NYC and have *zero* space for anything apart from my Blendtec. :D ).)

Can I mix in some oranges? How about some apples? Bananas? Maybe a pinch of stevia? Any thoughts? Thanks in advance for sharing.

I am usually a little reluctant to use carrots in smoothies to any great extent because of the amount of pulp. It would be seriously thick and even though we want smoothies to be pretty thick, I feel it's a bit much. Of course that would be a matter of personal preference.

My advice would be to make a soup. Then you would have the mental expectation for it to be thick. If you want a cream soup, add cashews, sunflower seeds or pine nuts. Look up some recipes for carrot soup and use those seasonings that look good.

A kind of pudding would be good with carrots and pineapple or apple, nuts for the creaminess and some spice, etc.

I don't put any root veggies in smoothies. I tried carrot tops in a smoothie once. Once was enough. I had to strain them out to be able to drink it.

I do like carrots in a juice mixed with either celery, cucumber or apples. I've also made smoothies with the carrot juice and leafy greens, but not with any fruits besides apples. You may not need any sweetener. Carrots are super sweet. :)

Here is a few recipes from the Vitamix manual.

#1

1 1/2 cups carrots
1 cup water
2 t. lemon juice
1 cup ice cubes

#2

1 medium carrot
1 orange, including the white part of the peel
1/2 medium apple
1/2 inch slice of pineapple
1/2 cup water
1 cup ice cubes

#3

1/2 medium banana
1 orange, peeled and quartered
1 baby carrot
1/4 cup celery
1/2 cup cranberries
1 cup ice cubes

There are more.

Broccoli, kale, celery, carrot, apple, water, ice.
Pineapple, carrot, lemon juice, ice.

Same blending instructions for all these smoothies. Start at slow speed, increase to high speed for 1 minute or until smooth. Serve immediately.


I'd say you could start with any of those recipes and add greens.

Another simple carrot concoction:
1 Carrot
1 orange
1/beet
4 strawberries
6 cashews
Blend et voila..
